Head Baker

Position Summary
The
Head Baker
leads all aspects of daily bread and sourdough production -- from levain builds and fermentation control to mixing, shaping, baking, and final product quality.
This role also oversees daily mise en place (MEP) for pie preparations and fillings, ensuring readiness for both retail and wholesale production.
You'll manage a team of 3 - 5 bakers, maintain tight production schedules, liaise with suppliers, and uphold Bartholomew's standards of quality, efficiency, and craft integrity.
Key Responsibilities
Lead daily bread production including mixing, fermentation, shaping, scoring, and baking
Oversee levain builds, dough scheduling, and fermentation management to ensure consistency and quality
Supervise and train a team of 3 - 5 bakers, fostering discipline, teamwork, and professional growth
Coordinate with pastry and coffee departments to ensure smooth morning service and product readiness
Contact and coordinate with suppliers to maintain proper ingredient and flour supply levels
Maintain and troubleshoot baking equipment; ensure daily logs and schedules are followed precisely
Monitor and maintain consistency in product quality, hydration levels, bake color, and scoring patterns
Oversee daily MEP for pie production -- including doughs, fillings, and baking schedules
Collaborate directly with ownership on production planning, efficiency targets, and seasonal menu execution
Requirements
Minimum
5 years of hands-on experience
in
sourdough bread and artisanal baking
(including mixing, shaping, and oven management)
Minimum
1 year in a Head Baker or equivalent leadership role
within a professional bakery environment
Deep understanding of fermentation, temperature control, and flour behavior
Strong organizational and time-management skills under high-volume production conditions
Passion for traditional craftsmanship, precision, and continuous improvement
Team-first leadership mentality -- able to train, correct, and inspire through example
Ability to work early mornings, weekends, and in a physically demanding environment
