Position: Lead Sushi Cook
We are currently seeking a Lead Sushi Cook to take charge of kitchen operations, lead by example, and ensure the highest standards of sushi preparation. This is a hands-on role for someone experienced, organized, and passionate about Japanese cuisine.
Responsibilities:
Prepare and assemble sushi rolls, sashimi, nigiri, poke bowls, and other menu items with precision and consistency.
Handle and fillet whole fish into sashimi-grade portions following restaurant standards.
Monitor food quality and freshness, ensuring only top-grade ingredients are served.
Maintain cleanliness and organization of the workstation in compliance with Alberta Health Services regulations.
Follow safe food-handling, storage, and rotation practices.
Support ordering, receiving, and stocking of seafood and dry goods.
Assist in tracking inventory and minimizing waste.
Ensure timely preparation and accuracy of all customer orders.
Provide a positive dining experience through attention to detail and presentation.
Learn and apply all restaurant recipes and contribute creative input to seasonal menu updates.
Requirements:
Minimum 1-2 years of experience as a sushi cook or in Japanese cuisine.
Skilled in cutting and preparing raw fish for sushi and sashimi.
Valid Food Handler Certificate (mandatory).
Knowledge of food safety standards and HACCP principles.
Ability to work efficiently in a fast-paced kitchen, including evenings and weekends.
Team-oriented, reliable, and attentive to detail.
Creativity and passion for Japanese/fusion cuisine is an asset.
