Chef de Partie (Section Legumes & Pates) - Restaurant Dorsia

Responsabilites :
Maitriser la preparation de la viande, du poisson, des fruits de mer, des feculents et des legumes avec competence et creativite.
Gerer et coordonner partiellement l'equipe de la ligne chaude, en maintenant un poste ordonne et propre.
Assurer la preparation pour le service a 16h45 chaque jour, avec tous les elements goutes et le poste prepare.
Controler les portions et gerer efficacement l'inventaire.
Collaborer a de nouveaux plats et fournir des retours pour ameliorer les operations culinaires.
Exigences :
Experience prouvee dans un role similaire, de preference dans un environnement de haute gastronomie.
Solides competences en leadership et capacite a former et motiver une equipe.
Engagement envers les normes elevees d'hygiene et de securite.
Maitrise de l'anglais et/ou du francais.

Chef de Partie (Vegetable & Pasta Section) - Dorsia Restaurant
Join the culinary team at Dorsia, Montreal's premier dining destination inspired by the lavish 1980s. We are seeking a skilled Chef de Partie to oversee our vegetable and pasta section. Your expertise will ensure the highest quality and presentation of dishes, embodying our philosophy of respect for natural and organic ingredients.
Responsibilities:
Master the preparation of meat, fish, seafood, starches, and vegetables with skill and creativity.
Manage and partially coordinate the hotline team, maintaining an orderly and clean station.
Ensure readiness for service by 16:45 daily, with all elements tasted and the station set.
Monitor portion control and manage inventory effectively.
Collaborate on new dishes and provide feedback to enhance culinary operations.
Requirements:
Proven experience in a similar role, preferably in a fine dining environment.
Strong leadership skills and the ability to train and motivate a team.
A commitment to high standards of hygiene and safety.
Fluent in English and/or French.
