Inspired by the high standards of European osterias and Michelin-recognized kitchens, we take pride in making everything in-house, from our naturally leavened dough to handcrafted pasta and carefully sourced ingredients.
We are looking for a passionate Chef de Partie with expertise in handmade pasta and a strong foundation in Italian and French cuisine. Knowledge of pickling, curing, and fermentation is a strong asset. If you are dedicated to technique, precision, and creativity, we want to hear from you.
Responsibilities :
- Prepare and execute handmade pasta dishes to the highest standard.
- Work with fresh, seasonal ingredients to create elevated Italian and French-inspired plates.
- Assist in the curing, pickling, and fermentation of ingredients for our evolving menu.
- Maintain consistency, portion control, and high-level execution during service.
- Work collaboratively with the Head Chef and kitchen team to develop new menu items.
- Ensure cleanliness, organization, and adherence to food safety and sanitation standards.
- Train and mentor junior team members in pasta-making and traditional techniques.
- Manage mise en place and ensure smooth kitchen operations during service.
Requirements
- Minimum 3+ years of experience in a professional kitchen, preferably in an Italian or French-focused restaurant.
- Strong proficiency in handmade pasta techniques (mixing, kneading, shaping, stuffing, extruding).
- Experience with pickling, curing, and fermentation is an asset.
- Deep understanding of traditional Italian and French cuisine, with a passion for high-quality ingredients.
- Ability to work efficiently in a fast-paced, high-pressure environment.
- Strong organizational skills and attention to detail.
- Passion for continuous learning and dedication to craftsmanship.
