Overview

The Bakery technologist role is responsible for new product development and product improvement for bakery products nationally, to ensure products meet required specifications and for resolving variances in product quality.

Responsibilities
  • Design and Develop new bakery products for Wonderbrands
  • Produce lab samples for innovation sessions, customer prototypes and basis of concept.
  • Coordinates the product development process including product formulation, working with procurement on sourcing ingredients and suppliers, developing prototypes, lab testing, overseeing plant trials and gaining approvals, then setting final product specifications
  • Works closely with Cross Functional Team to ensure product: quality, excellence, compliance with specifications and profitability by providing ensuring correct formulations and costing;
  • Ensures the quality of new and existing products through sample testing, trial runs and experiments;
  • Develops new formulations to replace/substitute current ingredients; performs lab and plant trials to ensure substitutions or replacements maintain product taste, quality and appearance;
  • Investigates and resolves product variations by isolating the factors that impact the integrity of the product and communicates necessary changes to production team;
  • Supports and assists plants in H&S compliance; instils a sense of urgency around compliance and increases awareness through involvement on committee; reports H&S issues immediately and supports investigations; and Maintains a safe and secure work environment for all employees.
  • Supervise product launches, ensuring recipes & specifications are followed by the Production team; training bakery staff on product specifications, verifying quality, troubleshooting where necessary.
  • Investigate and recommend new ingredients and rationalization of current ingredients, maintain excellent relationships with suppliers.
  • May be asked to Present and \xe2\x80\x98sell\xe2\x80\x99 products during customer tastings.
  • Keep abreast of the food / bakery trends such as baking techniques and packaging
  • Other related duties as assigned or required
  • Some travel is required /25% (Gatineau (Quebec), Amherst (Nova Scotia) and Mount Pearl (Newfoundland and Labrador)
Requirements
  • Bachelor of Science (Food Science preferred); and / or Culinary Diploma
  • Minimum 3 years of product development experience required, of which 1 year should be bakery;
  • Good knowledge of plant processes & equipment, ingredient functionality and food regulations;
  • Excellent analytical & problem solving skills;
  • Excellent interpersonal & communication skills, employing a patient and consultative approach;
  • Excellent organization & planning skills;
  • Committed & energetic with a strong attention to detail;
  • Passion for innovation and food
