Our pastry team is responsible for working together to produce superior quality baked goods and desserts in sufficient quantities to meet the demands of the guests for each meal produced. The Pastry Cook is responsible for working in conjunction with the pastry team to produce superior quality baked goods and desserts in sufficient quantities to meet the demands of the guests for each meal produced. The pastry cook reports directly to the Pastry Sous Chef and the Pastry Chef. All goods produced must meet the standards of the Company and all food safety guidelines. What you will do as our Pastry Cook

  • Ongoing communication with the Chef/Supervisor/team to discuss preparation of all baked items, dessert components and function desserts.
  • Daily production, handling, storage, rotation and service of all baked items.
  • Ensure proper storage, handling and rotation of all pastry goods
  • Ensure quality, consistency, taste and presentation of all products of the pastry kitchen meet standards
  • Monitor waste using current waste tracking system
  • Meeting production measurements and standards.
  • Monthly creation of lunch express dessert under the direction of the Chef
  • Ensure that food spoilage and waste are kept to a minimum
  • Ensure cleanliness of the bake shop area, including storage areas, refrigerators/freezers and all equipment
  • Maintain personal cleanliness throughout shift
  • Assist with execution of menu changes
  • Ensure consistent food preparation and the highest caliber of food presentation, taking advantage of all opportunities to improve on both
  • Assist Kitchen team as required
What we are looking for
  • A minimum of 2 years of pastry experience in a similar environment
  • Diploma or degree in Pastry & Baking Culinary Arts or an equivalent field an asset.
  • Sound knowledge of preparation of baked goods and desserts
  • Ability to operate all kitchen appliances (ovens, induction cooktops, gas burners, steamers, propane torches, mixers, sheeters, etc)
  • Ability to work supervised and unsupervised
  • Sound knowledge of current sanitation processes
  • Efficient time management skills
  • Strong organizational skills
  • Must be able to work a flexible schedule including days, nights, weekends and holidays
  • This position will spend 100% of the time standing.
  • Must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly.
  • Will be constantly exposed to high temperatures in the kitchen environment.
  • Manual dexterity required to use knives and kitchen appliances.
