THE ROLE
We are currently seeking a full-time permanent
Pastry Chef
.
The Pastry Chef reports to the Executive Chef and Executive Sous-chef, with a strong line of communication to the Director Food and Beverage and the General Manager.
In the absence of the Executive Chef and Executive Sous- Chef the incumbent is responsible for the daily operation and supervision of Pastry kitchen including disciplinary action.
The Pastry Chef is responsible for leading all pastry and dessert operations across the hotel's outlets and banquet functions. The role ensures excellence in product quality, presentation, and guest satisfaction while maintaining a safe, efficient, and cost-effective work environment.
Duties Include (but are not limited to):
Ensure the highest professional standards and quality, with the goal of exceeding guest expectations.
Oversee all aspects of pastry production for both a la carte and banquet operations.
Ensure elegant presentation, exceptional taste, and timely preparation of all products.
Respond promptly to guest allergy or dietary requests, including last-minute changes.
Review weekly function sheets to organize staff, production schedules, and par levels accordingly.
Maintain consistent product quality in alignment with hotel standards.
Develop daily specials and seasonal dessert offerings.
Maintain the highest standards of hygiene and food safety as per Alberta Health Services regulations.
Ensure proper product rotation, labeling, and storage to prevent spoilage or contamination.
Conduct monthly inventory and maintain accurate stock records.
Implement and monitor the hotel's environmental and waste-reduction initiatives.
Manage par stocks, prep levels, and ingredient ordering for optimal cost and quality.
Maintain food and labour budgets and assist in cost-control initiatives.
Establish and follow equipment cleaning and maintenance schedules.
Train staff in pastry skills, safety procedures, and emergency protocols.
Foster a positive, professional, and inclusive work environment that attracts and retains talented team members.
Keep the pastry kitchen secure to prevent loss or theft.
Stay informed of pastry trends and continually develop new ideas and techniques.
Authorize staff overtime when operationally necessary.
Perform other related duties as required.
Safety Responsibilities:
Provide ongoing leadership, training, and mentorship to pastry and stewarding staff.
Communicate effectively with team members and foster a culture of respect, accountability, and continuous learning.
Ensure compliance with Banff Park Lodge's
Safety Policy
and all safe work practices.
Maintain clean, organized, and hazard-free workspaces.
Ensure all staff receive WHMIS/Food Safe training and follow proper PPE use.
Report and investigate all accidents and near-miss incidents promptly.
Ideal candidate / Job Requirements:
Minimum
5 years of pastry experience
in high-volume hotels, resorts, or restaurants (a la carte and banquets).
Red Seal Journeyman Cook's Certificate
or equivalent required.
Proven supervisory or leadership experience.
Current
Food Safe
and
WHMIS
certifications.
Physically able to lift up to
50 lbs
and stand for long periods.
Strong organizational and communication skills.
Computer literacy for inventory, costing, and scheduling.
Flexibility to work overtime as required.
Flexibility to work day and evening shifts, weekends, and holidays.
Demonstrated passion for pastry innovation and continuous improvement.
