WhippleTree Bakery Inc. is a small-batch, artisan bakery in James Bay specializing in naturally leavened sourdoughs, fresh-milled grain breads, and rustic European-style loaves. Our focus is on slow fermentation, organic ingredients, and exceptional craft.
We're expanding our production team and are seeking a passionate baker who loves the process -- from mixing and shaping to scoring and baking.
Responsibilities
Primarily responsible for our baguette production
Mix, ferment, shape, and bake a variety of breads including naturally leavened sourdoughs, focaccia, and enriched doughs,.
Maintain consistent dough quality through proper fermentation timing, temperature, and hydration control.
Operate mixers, ovens, and proofing equipment safely and efficiently.
Weigh, scale, and prepare ingredients according to recipes and production plans.
Maintain a clean, organized, and food-safe work environment.
Contribute ideas for new products and seasonal offerings.
Requirements
Able to work alone or with a team.
At least 1 year experience in a professional bakery or similar production environment (sourdough experience preferred).
Understanding with experience of fermentation, shaping, and baking principles.
Ability to lift up to 25 kg (55 lbs) and work in a fast-paced kitchen.
Reliability and attention to detail -- punctuality is essential.
Early morning or overnight availability (shifts typically start 3-5 a.m.).
