Lead Line Cook
to help execute our vision with consistency, confidence, and a strong foundation of culinary skill.
Position Summary
The Lead Line Cook supports the team in daily operations while setting the tone for quality, organization, and professionalism on the line. This role is ideal for a cook with strong technique, excellent station discipline, and the ambition to grow in a high-performing kitchen.
Responsibilities - Culinary Execution
Execute dishes with precision, consistency, and attention to detail
Maintain high-level technique across saute, grill, garde-manger, and specialty stations
Uphold Persona's standards for flavor, seasoning, texture, and plating
Assist with daily prep, batch cooking, and mise en place organization
Leadership & Team Support
Lead by example during service--clean, organized, calm, and efficient
Help train junior cooks and new team members
Communicate clearly with the Sous Chef and Chef de Cuisine to support smooth service
Support line flow and timing, adjusting as needed during peak hours
Quality & Standards
Ensure all items meet culinary, sanitation, and presentation standards
Maintain a clean and organized station at all times
Follow safety guidelines, food handling procedures, and HACCP best practices
Prep, Organization & Operations
Participate in menu prep, specials, and seasonal changes
Assist with inventory, labeling, and proper product rotation
Identify issues proactively (product quality, timing, organization, equipment needs) and communicate efficiently
Qualifications
Minimum 2-4 years experience in a fast-paced refined dining environment
Strong foundational technique: knife skills, station management, sauce work, tasting skills
Experience leading a station or supporting a kitchen team
Ability to stay composed during high-volume service
Passion for Italian-influenced cuisine and modern culinary craft
Strong communication skills and a positive, collaborative mindset
Food Handler Certification required (or obtained upon hire)
