As our Lead Baker, you'll be at the heart of our kitchen, specializing in croissants, sourdough bread, and a variety of classic French pastries. You'll utilize traditional techniques to craft beautiful, flavorful baked goods, establish a high standard of quality, and bring creativity to our menu. In this leadership role, you'll oversee production, guide the assistant baker, and ensure our guests experience the very best in authentic French baking.
Responsibilities
Prepare and bake croissants, sourdough, baguettes, brioche, pain au chocolat, and other French pastries from scratch
Lead all stages of the baking process, including dough fermentation, lamination, and proofing
Ensure consistency, quality, and presentation of all baked goods
Oversee inventory, order ingredients, and minimize waste
Maintain a clean, organized, and sanitary work environment
Train, mentor, and support the assistant baker and kitchen staff
Develop and test new recipes to expand our bakery offerings
Ensure compliance with food safety and hygiene regulations
Requirements
Previous experience as a lead baker or pastry chef, with strong knowledge of French breads and pastries
Mastery of artisan baking techniques, including fermentation and lamination
Red Seal certification an asset, but not required with equivalent experience
Proven leadership and mentoring skills
Attention to detail and commitment to excellence
Ability to work early mornings and manage production schedules
Excellent organizational and time-management skills
Food handler's certification (preferred, or willingness to obtain)
Ability to stand for extended periods
Ability to lift up to 50 lbs
Creativity and passion for baking innovation
Work Schedule
Tuesday to Saturday 2:00 am - 08:00 am
