Description:
Reporting directly to the Food and Beverage Business Manager, your primary goal will be running the day-to-day operation of the Sports Centre Kitchen, as well as supporting all food outlets throughout the District as needed to include but not limited to the Top of the Fair, Season'd, Catering events, Agriplex and Food Truck. You will plan menus, develop recipes, manage food costs and inventory using Optimum Control, set goals, train staff, develop strategies and work the line to deliver exceptional food in line with our philosophy. You will directly oversee the Sports Centre kitchen staff, and play a very important role hiring, training, and onboarding hourly staff. You will set the tone and lead by example to build and support a work-culture that values positivity, accountability, hard work, trust, fellowship, and results.
Accountabilities:
- Manage the day-to-day operations of the Sports Centre Kitchen
- Manage Food Cost and Inventory
- Ordering of all food and food related supplies
- Menu development, recipes and portion control
- Dealing with suppliers
- Support with the overall direction and development of the Food program across the district
- Overseeing the development and proper use of daily opening / closing checklists
- Maintain equipment and sanitation standards
- Manage hourly BOH staff for Sports Centre
- Development of BOH hourly staff, including, recruiting, on-boarding, portion and quality control and ongoing training
- Overseeing / approving kitchen schedule
- Manages and champions quality and hospitality standards
- Support BOH, FOH and OPS systems, standards, expectations, and processes across the district.
- Develop, implement, and enforce Food specific policies and standards

Skills and Qualifications:
- 3+ years in a kitchen management in a multi-unit Food Service environment
- Food Handler and Smart Serve Certifications
- Able to respond quickly and make decisions in dynamic and changing circumstances
- Able to effectively communicate both verbally and in writing
Working Conditions:
- Ability to lift items weighing up to 50lbs
- Ability to work on foot for extended periods of time, standing and walking
- Must be able to work evenings, weekends, and holidays, along with overtime as required
