Harbour 60 is Toronto's premier destination steakhouse, renowned for exceptional food, service, and hospitality. Our team works at the highest level of execution, quality, and consistency. We are currently seeking a full-time Fish Butcher to join our culinary team in a morning role.

Position Overview:

The Fish Butcher will be responsible for all aspects of seafood preparation and butchery. This role requires a high degree of skill, efficiency, and product knowledge. The ideal candidate will take pride in handling premium seafood with care and precision while maintaining our uncompromising standards of quality.

Responsibilities:

Break down and portion a wide variety of fresh fish and shellfish Steam and clean lobsters; poach prawns; cut and marinate squid Clean and prepare oysters and other shellfish for service Manage seafood storage, rotation, and quality control Assist with dry-aging and specialty seafood preparations Maintain a clean, organized, and food-safe work environment Work independently to meet morning prep timelines

Qualifications:

Minimum

1 year of fish butchery experience

Minimum

2 years of restaurant kitchen experience

Strong knowledge of seafood handling, butchery techniques, and dry-aging Excellent knife skills and attention to detail Ability to work efficiently and independently in a high-standard kitchen
