Position Summary:
Reporting to the Resort Executive Chef, the Executive Chef - Lakeside Dining exhibits their culinary talents by personally performing tasks while leading staff in the overall success of culinary operations comprised of Lakeside Dining Room, The El Bar, Boardwalk Bistro, Eldorado Marina and Banquets. Our ideal candidate is creative with a strong knowledge of industry trends along with demonstrated technical and organizational skills and has several years of experience in an upscale environment. The Executive Chef - Lakeside Dining continually works to improve guest and employee satisfaction while maximizing the financial performance in all areas of responsibility. Must be goal and service oriented, with the ability to lead and inspire our culinary talent.

Duties & Responsibilities:

  • Perform day-to-day tasks, producing key menu items, while leading the staff and managing all food related functions
  • Ensure exceptional quality of all ingredients, preparation and plating of food items
  • Conduct daily line checks, food reviews and recipes of the day; ensures that clear feedback is provided to the entire kitchen team and food service staff and management
  • Be visible in the outlet and events providing recognition to guests, promoting food positive public relations, handling special requests
  • Ensure that sanitation standards as set forth by local, provincial, and federal Health Department regulations comply as well as the cleanliness and organization of the kitchen and its equipment as well as training staff on proper sanitation guidelines
  • Ensure correct handling, storage, and distribution of supplies while monitoring waste
  • Ensure proper staffing levels by assisting in the recruiting, interviewing, and hiring talented kitchen staff members in accordance with the PDA\xe2\x80\x99s hiring policies
  • Step in for other kitchen staff as needed
Business & Financial Leadership:
  • Control labour and operating expenses through effective planning, budgeting, purchasing decisions, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit
  • Maintain appropriate staffing levels and labour costs through effective hiring, training, and scheduling of department relative to budget and guest service level expectations
  • Prepare and execute annual budgets, monitor, and take corrective action as necessary to help ensure that budget goals KPI are attained
  • Approve all product invoices before submitting to the accounting department
Leadership & Culinary Team Development:
  • The Executive Chef will lead the team in understanding and adhering to all kitchen operational standards, policies and procedures, and training programs
  • Manage assigned staff, including scheduling, training, performance feedback, discipline, investigations, and terminations
  • Coordinate the selection, training, coaching, development, motivation, and evaluation of kitchen employees to ensure exceptional food quality and presentation for our guests
  • Monitor and maintain use of safe food handling procedures as well as a safe working environment by using and ensuring staff use correct food handling skills and food safety guidelines
Skills & Abilities:
  • Strong communication skills
  • Strong leadership skills, ability to motivate teams to produce consistently great food
  • Passion for good food, local ingredients, and quality customer experiences
  • Excellent knife skills
  • Must love and enjoy working with food
  • Ability to portion control on a large scale
Minimum Qualifications:
  • Culinary Certificate or Degree by an accredited culinary agency preferred
  • 7-10 years\xe2\x80\x99 experience in a professional kitchen and restaurant environment
  • Adept at working effectively in high energy and busy environments and works well under pressure
  • Able to deliver and exceed the expectations of a highly demanding clientele
  • Ability to obtain and/or maintain any government required licenses, certificates, or permits
  • Solid track record of success; demonstrating upward career tracking
  • Able to work ten hour-plus shifts plus the ability to stand, sit, or walk for extended periods of time
  • Able to grasp, lift and/or carry up to 50 lbs. as needed
