The Grizzly Paw is a craft brewery and hospitality company located in Canmore, AB at the heart of the Canadian Rockies since 1996. We are looking for an energetic and knowledgeable leader who is motivated and ready to provide our colleagues and customers with memorable culinary experiences!

Duties & Responsibilities:

  • Responsible for the culinary operations and innovative menu creation of both Pub and Brewery locations
  • Strong leadership skills. Coach and mentor colleagues and hone the skills of others.
  • Train and develop colleagues of all skill levels and infuse passion in daily duties
  • Strong culinary operational skills for high volume kitchens. Hands on approach is a must.
  • Focus on ongoing recruitment, training and colleague retention required
  • Provide regular feedback to colleagues and recognize their contributions through performance reviews and other forms of feedback.
  • Develop and test recipes. Standardize production processes to ensure consistent quality.
  • Committed to daily quality controls from the purchase of products to the finished product.
  • Plan and price menus on a seasonal basis that are reflective of our local marketplace and customer demand.
  • Complete month-end inventories in a timely, accurate manner and ensure financial targets are achieved (food cost, labour ratios).
  • Ensure proper equipment operation and maintenance.
  • Oversee catering events. Offer culinary instruction and/or demonstrate culinary techniques.
  • Ready and willing to work in a service role which may include direct contact with the public and or vendor representatives.
  • Maintain proper audit track records, follow company policies & procedures
  • Develop and maintain close and effective working relationship with all supporting departments
  • Follow health, safety, prevention and sanitation guidelines at all time
  • Consider the environmental impact in all decisions
  • Other duties and projects as assigned
Qualifications:
  • A passion for the culinary profession
  • Red Seal designation in the field of culinary arts.
  • Degree in Hotel/Restaurant Management or related discipline a strong asset
  • Minimum 3 years of experience in a leadership role within high volume kitchens
  • Innovative, creative and willing to take risks
  • Results oriented with the ability to be flexible and work well under pressure
  • Excellent interpersonal skills, with strong written and verbal communication abilities
