Key Responsibilities
  • Manages all food and beverage activities through subordinate staff; ensure they have sufficient resources available. Directs the undertaking of menus, department budgets, undertakes corrective action, ensures scheduling and expenditures are controlled. Ensures that all food is prepared in accordance with predetermined quality standards
  • Performs or delegates statistical analysis such as revenue reports, product mark ups, food costing, product inventories plus analysis of food products. Approves and monitors invoices and expenditures.
  • Retains a thorough and updated knowledge of company policies & procedures, provincial & local regulations for casino operations, beverage service and food services. Liaises with government regulators that impact the operation of the department. Ensures that all applicable licenses are up to date.
  • Coordinates corporate and department initiatives with the internal stakeholders. Ensures initiatives are discussed and approved with site managers and corporate. Monitors industry trends and recommends appropriate action. Develops new food recipes for testing and for new menu items.
  • Identifies business opportunities and oversees the development and deliverables of these efforts.
  • Develops and directs Kitchen staff to achieve high levels of performance and customer service; provides customer-oriented menus that reflect local and national trends.
  • Liaises with the Casino Management Team to ensure that a high level of effective communication is maintained.
  • Ensures maintenance of equipment is undertaken. Schedules inspection and maintenance. Ensures that proper safety, hygiene and sanitation practices are followed. Liaises with property management and equipment contractors to ensure operations are maintained.
  • Oversees the Human Resources issues, performance, safety and recruitment and development needs of the department. Manages the performance of direct reports including training, appraising performance, providing positive and corrective feedback, coaching, and administering discipline.
What You\xe2\x80\x99ll Require
  • Diploma or Degree in Culinary Arts, Restaurant Management with 5 to 7 years\xe2\x80\x99 experience in restaurant supervision, as a Chef or an equivalent combination of education, and experience
  • Extensive cooking and production experience in a fast-paced environment
  • Excellent leadership and managerial skills and the ability to form and maintain a strong team
  • Red Seal certification or equivalent preferred
  • Essential math skills
  • Knowledge of Workplace Hazardous Materials Information System (WHIMS), Provincial Health Regulations and sanitation laws
  • Understanding of proper use and maintenance of major kitchen equipment
  • Excellent communication skills both written and verbal
  • Working knowledge of MS Excel, word processing, email and scheduling
  • Experience in a unionized environment is an asset
  • Must be available to work all shifts and be on call 24/7
  • Provincial certifications for alcohol service and food preparation
  • Knowledgeable in safety and fire prevention / evacuation procedures
  • Ability to lift up to 50 pounds required
