Responsibilities:
? Create a sushi menu that includes different ingredients and raw fish, such as
salmon, tuna, unagi and other;
? Prepare all types of sushi, including maki, nigiri and sashimi;
? Slice and present sashimi in its various forms, i.e. rolls, temaki, nigiri, sashimi,
futomaki;
? Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy
sauce, when appropriate;
? Prepare Japanese appetizers, soups and salads;
? Fillet fresh fish suitable for sushi consumption;
? Bake Japanese deserts from scratch;
? Make sushi rice;
? Make Japanese sushi sauces;
? Supervise kitchen staff and helpers;
? Organize and manage buffets and banquets;
? Order supplies and equipment;
? Manage kitchen operations;
? Inspect kitchens and food service areas;
? Maintain inventory and records of food, supplies and equipment;
? Prepare and cook complete meals or individual dishes and foods;
? Plan menus, determine size of food portions, estimate food requirements and
costs, and monitor and order supplies;
? Train staff in preparation, cooking and handling of food;
