  • What you will be doing:
  • Manage assigned F&B Manager on Duty responsibilities including being a point of contact for all Outlets.
  • Balance operational, administrative and Colleague needs while maintaining floor presence.
  • To contribute and focus on the daily growth of the operation through awareness and understanding of LQA, EES, Forbes and Fairmont Pacific Rim Standards.
  • Promote teamwork as a strong component of the daily service culture.
  • Work with Outlet Sales Manager and Food & Beverage Coordinator to ensure the execution of successful group events.
  • Participate in service as necessary per outlet needs.
  • Attend and participate in the daily Food and Beverage meetings, stand-ups and conduct daily shift briefings.
  • Follow up on guest concerns and share all guest comments with the colleagues.
  • To be Health & Safety conscious and actively involved in maintaining a safe work environment.
  • Participate in the training and coaching of new and existing team members.
  • Attend pre-convention & departmental meetings as required for outlets Operation.
  • Participate in the budgeting and forecasting process for the outlets.
  • Work in conjunction with the Outlet Chef, Executive Chef and Food & Beverage Director on promotions, menus, and special events.
  • Responsible for all Hotel wine sales and inventory.
  • Create and execute revenue incentives throughout the outlets
  • Lead the Sommelier team for Botanist by motivating, coaching and monitoring the performance levels of all team members.
  • Personalized Wine Director consultation for Conference and Sales clients and top F&B spenders
  • Responsible for all Hotel wine sales, inventory and ordering.
  • Participate in winery partnerships/wine agent meetings
  • Develop wine training programs for Outlets to ensure continuous growth.
  • Responsible of wine preservation systems and displays
  • Responsible of wine list costing/pricing through the Hotel. Evolving lists keeping with vision and current industry trends
  • Monitor all guest service standards, constantly seeking ways to improve product and service as well as increase volumes and profits
  • To assist in the recruitment and training of Food and Beverage colleague
  • Performs all other tasks as assigned by management.
  • Your experience and skills include:

  • A passion for all things hospitality required
  • WSET Level 3 or above is required
  • 4 years’ experience or more required
  • University/College degree in a related discipline preferred
  • Previous Luxury hospitality experience required
  • Food and Beverage leadership experience in a high capacity role preferred
  • Previous experience in a high volume restaurant preferred
  • Experience with FORBES 5 Star is preferred
  • Previous MICROS/Silverware experience preferred
  • Computer literate in Microsoft Window applications required
  • Excellent leadership, communication, organizational skills required
  • Strong interpersonal and problem solving abilities required
  • Highly responsible and reliable required
  • Ability to work cohesively as part of a team required
  • Ability to focus attention on guest needs, remaining calm and courteous at all times required

Physical Aspects of Position (including but not limited to)
      • Constant standing and walking throughout shift
      • Constant lifting and carrying up to 20-50 lbs
      • Occasional kneeling, pushing, pulling, lifting
      • Occasional ascending or descending ladders, stairs and ramps
