Cutten Fields, established in 1931, is a private golf and tennis club located in Guelph, Ontario. We have developed a first class food and beverage operation catering to our member's needs as well as high class banquet facilities. We are currently searching for an experienced chef. As a seasonally fluctuating operation, the position requires an individual who can maximize time efficiently and work the necessary hours as dictated by the season, the Executive Chef and Food and Beverage Manager.

Overview



As a key member of the culinary team, our Chef de Cuisine will assist in leading the culinary team to facilitate the operation of the kitchen through execution and service orientation. They will work hand in hand with the FOH team to support, maintain and execute our standards of quality.


The Chef de Cuisine is responsible for assisting in leading, motivating and engaging the culinary team by executing the highest standard of culinary excellence. The Chef de Cuisine is also accountable for helping ensure maximum productivity and cost-effectiveness through food and labour costing initiatives. The individual will bring professional, enthusiastic ownership to our menus each day. The Day to Day:



Work alongside the Executive Chef to assist with the following:

Communicates the clubs vision to all team members and leads by example. Actively monitors kitchen operations and cleanliness Oversee all kitchen operations, ensuring consistent quality, organization, and execution across all aspects of service. Manages day-to-day operations, food and labour cost Menu development with the Executive Chef Builds and maintains relationships, communicating with team members from all departments and our management team Follows proper ordering, inventory and receiving procedures Shows leadership in creating a culture that revolves around the experience and enjoyment of food and cooking Works together with the management team to further develop the club and its offerings Ability to work in an environment that encourages and fosters positive teamwork, participation, creativity, openness, honesty and mutual respect Comfortable interacting with the membership and ability to solicit feedback Conducts recruitment and selection, training and development initiatives as well as performance management and employee coaching Ensures proper health and safety procedures are followed by all team members Uses conflict/resolution and problem solving skills

Qualifications



Chef de Cuisine or Sous Chef experience Post-secondary education in Culinary Arts Management or similar Red Seal, Certified Chef de Cuisine designation Certification desirable Food Handler, Food Safe, Serve Safe Certification or equivalent Strong business acumen Efficiency using Microsoft Word, Excel, and Outlook Self-starter, flexible and ability to multitask in a fast paced environment Must possess excellent verbal and written communication skills Human resources management skills such as: recruitment, selection, training, performance management Strong leadership skills Time management skills

Pay: $60,000.00-$70,000.00 per year
