SUMMARY

About the Role \xe2\x80\x93 Sommelier / Assistant Food and Beverage Manager

The Sommelier / Assistant Food and Beverage Manager will oversee the food and beverage areas within the hotel. A successful Sommelier / Assistant F&B Manager has an in-depth knowledge of wines and the ability to quickly recall and share complex information about different types of wines, wine pairings and tasting notes. Responsibilities may include scheduling, forecasting and training, ensuring compliance with federal, state and local laws as well as all operating procedures. This person may also coordinate special events at the hotel. The Assistant Food and Beverage Manager must have strong communication and analytical skills. Food and Beverage cost control experience is helpful.

Some of the responsibilities include:

  • Ordering wines
  • Maintaining the wine stock
  • Creating a wine list and writing wine descriptions
  • Suggesting food and wine pairings to servers and customers
  • Recommending wines based on customer preferences
  • Training waitstaff on wines
  • Conducting wine tastings for staff and customers
  • Hosting winery tours
  • Teaching wine courses
  • Daily operation of outlets. Duties include but are not limited to:
1. Managing service across all outlets and service periods.

2. Ensuring outlets are prepared for service according to defined standards.

3. Conducting pre\xe2\x80\x93service meetings.

4. Ensuring all opening, handover and closing checklists are complete.

5. Ensure that all relevant guest information is being communicated to staff and the kitchen.

6. Communicating to the Restaurant/Lounge manager all issues as they arise.

7. Daily administrative and financial reporting.

8. Developing and maintaining service standards.

9. Keeping the food and cocktail bibles up to date.

10. Smallwares inventory

11. Restaurant supplies inventory.

Qualifications:

\xc2\xb7 Minimum of 2+ years as F&B Management preferred

\xc2\xb7 Wine/beverage knowledge in an upscale environment preferred

\xc2\xb7 Ideal applicant should have strong organizational skills, the ability to work with a flexible work schedule, be a team player and a dynamic leader
