Francois Offshore Catering Ltd are currently looking to recruit experienced and immediately available Accommodation Facilities Managers to join our clients Offshore Drilling vessel. Stena Drilling is delighted to be commencing operations offshore Newfoundland and Labrador, Canada for an anticipated five (5) month drilling campaign onboard the Stena IceMAX Drillship. There are currently temporary opportunities for 2 Accommodation Facilities Manager, working on a 28/28 on/off rotation. Please note there is a possibility that successful candidates will be required to join the drillship overseas at an international location prior to mobilizing to NL. Wage: $46.68 CAD per hour Benefits: Dental, Life, Medical, Vision, and where applicable, Offshore Allowance. Position Objective:
Manage the client\'s operation at a designated location, adhering to budgetary constraints, company policies, procedures, and legal requirements. Skills, Education, and Experience:
  • City & Guilds 706/1 & 706/2 or equivalent.
  • 12 years relative experience
  • Chief Cooks COC
  • STCW Certification
    • Personal Survival Techniques (A-VI/1-1)
    • Fire Fighting and Fire Prevention (A-VI/1-2)
    • Elementary First Aid (A-VI/1-3)
    • Personal Safety and Social Responsibility (A-VI/1-4)
    • Proficiency in Security Awareness (A-VI/6-1)
  • Basic food hygiene as minimum,
  • Relevant industry experience, including proven management skills in a similar catering operation.
  • Demonstrate the following:
  • An understanding of operating a catering business according to strict budgetary constraints
  • A working knowledge of a supervisor\'s responsibilities concerning food hygiene
  • An understanding of nutrition and menu planning
  • Customer service experience
  • Ability to manage designated human resource issues
  • Computer literacy - Microsoft word, excel and Outlook
  • Competency as a trainer
  • Good communication skills with the ability to maintain a good working relationship between company staff, customers, clients and management

Scope of Duties:
  • Ensuring the day-to-day routines within the catering, facilities, accommodation and food services provided under the terms of the contract are managed to the satisfaction of the client standard.
  • Continually monitor the standard of operations and ensure that contractual obligations are met.
  • Administer all documentation for catering facilities, accommodation, food safety, (HACCP) work instructions and procedures.
  • Menu planning and ordering food provisions, cleaning materials within the allocated budget.
  • Included in duties is working in the galley for food preparation and food service.
  • Prepare food items in accordance with menu requirements using standard recipes and production methods, including the effective use of garnish and presentation techniques to enhance the visual impact of prepared food.
  • Utilise batch-cooking systems to ensure the continuous supply of fresh food to the customer.
  • Comply with customer requests in a timely, friendly and efficient manner.
  • Ensure that kitchen staff are effectively deployed to enable prompt service of all meals at the agreed times.
  • Ensure employees under their supervision work in a healthy/safe and are environmentally aware.
  • Ensure that all galley staff are made aware of their responsibilities and receive the necessary training and guidance to improve overall performance.
  • Order correct quantities of stock to avoid waste and food shortages.
  • Ensure all deliveries are checked and stored in compliance with the company\'s procedures
  • Ensure that good stock rotation procedures are followed (first in, first out) to minimize the wastage of stock.
  • Conduct accurate stock takes and document any discrepancies report back to your Operations Manager.
  • Responsible for the managing of the Bond and accounting for ordering stock, stock taking and ensuring cash is banked at the end of each trip.
  • Conduct induction training of new staff and appraisal reports for your staff highlighting strengths and weaknesses.
  • Ensure that all staff are aware of their responsibilities and receive the necessary training and guidance to improve overall performance.
  • Ensure that the highest standards of hygiene and cleanliness are maintained at all times and staff are well presented.
  • Ensure contractors under their supervision work in a healthy and safe and are environmentally aware. Report any unsafe acts or conditions to the safety officer and operation manager as soon as possible.
  • Ensure that any customer complaints are dealt with to the customer\'s satisfaction and forwarded to the operation manager for analysis and comment.
  • Complete end of month and end of trip reports in a timely manner and send to Operations Manager.
  • Ensure that materials, such as chemicals, are used in accordance with manufacturer\'s instructions and MSDS sheets (Example: dilutions, storage, harmful effects etc).
  • Ensure compliance with all Francois Offshore Catering policies and procedures, including adherence to all client\'s health and safety standards, policies and procedures.
  • Ensure that defective equipment is reported to the appropriate person and properly recorded.
  • Report, and when appropriate take- action, for incidents of loss, theft, damage or unacceptable raw materials.
  • Ensure waste routines are in conjunction with company waste management procedure and clients waste system is followed.
  • Participate in Company stop card system and report any incidents immediately.
  • Participate in team meetings. Contribute ideas that will make the workplace healthier/safer more environmentally aware and more productive.
  • Conduct and/or attend training specific to your particular vessel / platform.
  • Ensure the service of all meals at the correct times to the company standard and client\'s satisfaction.
  • All food preparation is conducted in a safe manner in line with food safety legislation and all documentation is documented for due diligence.
  • Follow company work instructions, procedures and policies and ensure all staff adhere also.
  • Line Manager for all catering staff until the POB reaches the requirement for a Leading Steward.
  • During reduced manning all food preparation and serving of meals will be conducted by the Accommodation Facilities Manager.
  • Ensure that regular communication is maintained with the operation manager in order that any issues are dealt with in a timely manner.
  • Carry out other duties as requested by the operation manager that could further enhance the overall service and efficient running of the catering operation.
