Key ResponsibilitiesCommissary Kitchen & Production Operations
Supervise daily commissary kitchen production operations
Ensure food is prepared according to approved recipes, specifications, and production plans
Oversee preparation of meats, sauces, soups, marinated products, and cooked items
Coordinate kitchen workflow to meet production targets and delivery schedules
Enforce standardized recipes, portion sizes, weights, marination specifications, and cooking processes
Conduct regular taste, texture, and appearance checks
Warehouse & Receiving Operations
Oversee receiving, storage, and dispatch of food and non-food supplies
Verify deliveries against purchase orders (quantity, weight, quality, specifications)
Inspect meat quality including freshness, fat percentage, and cut size
Ensure proper storage, labeling, FIFO, and cleanliness standards
Report shortages, variances, or quality issues to management
Purchasing & Vendor Management
Source and purchase halal meats, produce, spices, packaging, and operational supplies
Obtain quotes, compare pricing, and negotiate costs and payment terms
Maintain approved vendor lists, pricing agreements, and backup suppliers
Forecast purchasing needs based on kitchen production schedules
Track price changes and notify management of significant increases
Inventory & Cost Control
Monitor inventory levels to prevent shortages, overstocking, and waste
Track raw material usage, yields, and waste from kitchen production
Update inventory records based on received and issued quantities
Support food cost analysis, margin control, and inventory valuation
Assist with monthly inventory counts and adjustments
Create and manage purchase orders as per company approval limits
Perform 3-way matching of purchase orders, receiving documents, and invoices
Review invoices for pricing accuracy, quantities, taxes, and vendor terms
Code invoices to appropriate GL accounts (food, meat, packaging, supplies, etc.)
Track vendor credits, discrepancies, and returns
Submit invoices for approval and support timely vendor payments
Maintain organized purchasing, warehouse, and accounting records for audits
Support weekly and month-end purchasing and cost reports
Food Safety, Halal & Compliance
Enforce food safety, sanitation, and hygiene standards in kitchen and warehouse
Ensure proper temperature control, storage, labeling, and FIFO
Maintain halal compliance at all times
Prepare the commissary for health, halal, and internal audits
Address and document corrective actions promptly
Staff Supervision & Training
Supervise warehouse and commissary kitchen staff
Assign daily tasks and monitor productivity and attendance
Train staff on recipes, equipment use, food safety, cleanliness, and procedures
Enforce workplace policies and safety standards
Support onboarding and training of new hires
Documentation, Reporting & Growth Support
Complete daily production, receiving, and sanitation logs
Record batch production, yields, and waste data
Prepare weekly purchasing and inventory summaries
Support standardized processes for multi-location and franchise operations
Assist with documentation for outsourced or licensed manufacturing
Qualifications & SkillsRequired (Non-Negotiable)
Hands-on commissary kitchen or central kitchen experience
Warehouse or production supervision experience
Strong purchasing experience
Accounting skills including PO creation, invoice matching, and cost tracking
Strong understanding of food preparation, especially meat handling and cooking
Knowledge of food safety, sanitation, FIFO, and inventory control
High attention to detail and accuracy in documentation
Proficiency in Excel and accounting or purchasing systems
Preferred
Experience in restaurant or commissary operations (QSR or multi-unit preferred)
Familiarity with QuickBooks, Sage, Xero, or similar systems
Understanding of GST/HST and vendor tax documentation (Canada)
Experience supporting multi-location or franchise operations
