Arctic Lodges is located in northeastern Saskatchewan on Reindeer Lake. We are a world-class trophy fly-in fishing resort offering our guests all-inclusive packages. We are seeking great people who love the outdoors to join our outstanding team of service providers. Arctic Lodges accommodates on average 16 guests per day. We are committed to offering a warm, family oriented work environment with strong team culture. The Position: The Executive Chef of Arctic Lodges is primarily responsible for the operation of the kitchen, including food preparation and quality, physical maintenance, and inventory functions, to ensure the Arctic Lodges quality, while making sure all food and supply costs are controlled. The goal is to obtain full guest satisfaction while working in a dynamic, fast-paced environment. It is important for the Chef to deliver a positive guest experience through five-star food and great customer service. The head chef should be capable of delivering four-star cuisine for up to 16 guests per day plus preparing the staff meals. In addition managing 3 other team members in the kitchen. Key Elements of the Job:
  • Create an above and beyond culinary experience for our guests.
  • Provide leadership in the kitchen by establishing plans of character, integrity, and quality which align with our guest\'s needs and expectations, resulting in the long-range continued growth and profitability of the company.
  • Plan and develop menus for the lodge considering factors such as experience, product availability, food and service cost, market conditions, and business volume.
  • This position oversees all aspects of the kitchen including menu creation, ordering, inventory control, costing, scheduling, service quality, training, development, and evaluation of employees working in the kitchen.
  • Control labor and operating expenses through effective planning, budgeting, purchasing decisions, policymaking, and inventory control.
  • Ensure sanitation standards set by Arctic Lodges and government regulations are met and exceeded.
  • Establish control systems that will assure quality and consistency. By setting proper purchasing specifications, reviewing operating criteria, and developing an awareness of the importance of food preparation and quality.
  • Communicate with employees and managers to ensure operational needs are met. Also, attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Build an open and trusting environment where everyone\'s opinion is shared and valued.
  • Lead with confidence, creativity, and inspiration.
Preferred Qualifications and Experience :
  • At least 10 years of progressive leadership in a multi-faceted culinary environment.
  • Red Seal Certification or international equivalent considered an asset.
  • Experienced leader able to delegate, set expectations, and supervise the culinary and service teams to work collaboratively in designing world-class menus and exceptional culinary and dining experiences.
  • Previous experience with creating schedules and employee performance management required.
  • Strong interpersonal and problem-solving abilities required.
  • Must be able to work well under pressure in a fast-paced environment. With a focus on guest needs, remaining calm and courteous at all times. Ability to use tact and diplomacy to resolve any conflicts.
  • Requires good communication skills, both verbal and written.
  • Extensive knowledge of menu development, insight into marketing, cost control.
  • Thorough knowledge of food products, standard recipes, and proper preparation.
  • Ability to conduct meetings, menu briefings and maintain communication between staff and leadership.
  • Degree or diploma in hotel and restaurant management is considered an asset.
  • Events experience an asset.
  • Physical Requirement- Constant standing and walking throughout shift. Occasional environmental exposures to cold, heat, and water. Must be able to lift and carry up to 50lbs.
  • Food Safe Certificate required.
BONUS will be offered at end of the contract. Seasonal position beginning late May - late August with some pre-season remote planning. Excellent Tip Out Free onsite accommodations. Job Types: Fixed term contract, Seasonal
