Position Overview



The Sous Chef supports the Executive Chef in the planning, coordination, and execution of all food preparation and service operations for banquets and catered events at the Centre. This role provides leadership to kitchen and stewarding staff, ensures consistent food quality and presentation, and maintains strict adherence to food safety, cost control, and operational standards. The Sous Chef plays a key role in maintaining efficient kitchen operations while delivering exceptional culinary experiences.

Primary Functions and Responsibilities



Coordinates and executes all food services in a consistent, quality-oriented manner. Demonstrates comprehensive knowledge and hands-on ability across a broad range of culinary techniques, cuisines, and production methods appropriate to a large-scale food service operation. Provides a proactive, quality-driven, creative, and results-oriented leadership approach that supports team development and operational excellence. Assists in maintaining established cost controls related to food, labour, and supplies. Implements and manages standard operating procedures, controls, and systems as directed by the Executive Chef. Prepares, implements, and maintains quality control standards and cost control procedures in accordance with Hazardous Analysis Critical Control Points (H.A.C.C.P.) principles. Ensures adherence to production deadlines and service times for all functions. Effectively delegates and supervises kitchen personnel. Ensures proper food handling, storage, rotation, and inventory practices in compliance with FIFO principles and Food Safe standards. Maintains a clean, sanitized, and safe kitchen environment at all times. Ensures food production mise en place levels align with operational requirements. Trains kitchen staff to ensure skills and tasks meet Centre culinary standards. Promotes, monitors, and enforces safe work practices in compliance with the Centre's safety and health programs and applicable legislation. Demonstrates professional conduct and thorough knowledge of departmental and interdepartmental policies. Provides friendly, courteous, and professional service to customers, staff, management, and stakeholders.

Job Requirements



Minimum ten (10) years of progressive culinary experience in a convention centre, major hotel, or high-volume food service environment. Demonstrated experience across a wide variety of cuisines, service styles, and large-scale food production operations. Post-secondary training in Commercial Cooking from a recognized community college, including Interprovincial certification. Valid Food Safe certification. Successful completion of Workplace Hazardous Materials Information System (WHMIS) training. Proven leadership and supervisory experience within a professional kitchen environment. Strong organizational, time-management, and communication skills. Ability to manage multiple priorities in a fast-paced, deadline-driven environment. A valid class 5 drivers' license is required.

This is a scheduled position, subject to flex time arrangements, with salary in accordance with the Collective Agreement between the Convention Centre Corporation and Canadian Union of Public Employees - Local 500.
