DUTIES AND RESPONSIBILITIES:

Reporting to Bistro 67 Chef, the incumbent is responsible for the food service in the restaurant, The Pantry and Events. Provides daily guidance to students and staff, supporting academic programming, to deliver quality food and beverage service in the restaurant on a shift by shift basis. Provide direction to students and staff throughout the daily operational cycle, from set-up and service to shift close. Assist with training of students and staff in the safe and efficient use of all related equipment in the Culinary and Hospitality Management practical learning facilities, and coordinate the ongoing daily maintenance of that equipment.

The incumbent will be involved in the day-to-day operations of the restaurant, and retail store, performing duties including, but not limited to, requisitioning food and beverage product, receiving, inventory control, food preparation, compliance to all food safety regulations, and the provision and maintenance of a safe and healthy workplace.

  • Manage the preparation & service of food to all clients and guests
  • Procure high-quality, cost-effective food service products with which to prepare food items and foster relationships with suppliers of food items, by supporting related services and procedures in the central stores operation as required as
  • Consult function sheets and reservation bookings to coordinate proper staffing levels, purchasing, preparation storage of food
  • Research, generate, test and implement menus required for Bistro 67 and Events services, as well as other menus that will support the learning experience of the students during their rotation at the Bistro 67.
  • Supervise and support staff and students, delegate work assignments, resolve inconsistencies to set standards.
  • Demonstrate and practice proper preparation, presentation, service, storage, safety and sanitation with regards to all food and beverage items
  • Council & correct any behavior inconsistent with the policy and standards of Durham College and Bistro 67.
QUALIFICATIONS: * A minimum of a 2-year diploma in culinary, red seal certification is considered an asset.
  • A minimum of 2 years experience in accepted/accredited fine dining operations, having attained a supervisory/management position
  • Strong problem solving skills and team focused approach
  • Demonstrated commitment to equity, diversity and inclusion in all matters related to students, staffing and programming.
