From whipping up epic event menus to keeping our high-volume production on point, you'll be the go-to person for making sure everything runs like a well-oiled (and well-seasoned) machine. This is a dynamic role at a seasonal resort operating seven months of the year, perfect for someone who loves the ebb and flow of a busy alpine kitchen. Key Responsibilities:
Banquet & Catering Execution
Supervise the preparation and execution of catered events, weddings, conferences, and group bookings.
Work with the Executive Chef and Events team to align menus with client expectations and operational capabilities.
Lead event kitchen teams to ensure smooth, timely service and high guest satisfaction.
Production & Prep Oversight
Manage the daily production of bulk-prepared items such as soups, sauces, baked goods, and ready-to-serve products.
Ensure food quality, consistency, and efficient delivery to various resort outlets.
Monitor production schedules and adjust staffing or prep levels based on volume and demand.
Kitchen Leadership
Support hiring, onboarding, and daily supervision of banquet and prep cooks.
Provide hands-on training, coaching, and performance feedback to junior staff.
Maintain clear communication with the Executive Chef and other Sous Chefs to coordinate kitchen activities.
Standards & Compliance
Uphold all food safety and sanitation practices (HACCP, WorkSafeBC).
Monitor inventory levels and support ordering and stock rotation to control food cost and minimize waste.
Ensure allergen protocols and dietary requirements are met during production and events.
Qualifications:
Red Seal or equivalent certification preferred.
Minimum 3-5 years of progressive culinary experience, including banquet or large-volume production.
Previous experience as a Sous Chef or strong First Cook in a comparable environment.
Demonstrated leadership skills and the ability to manage teams in a fast-paced setting.
Excellent time management, organizational, and communication skills.
Physical ability to perform general office duties, including sitting at a computer for extended periods, bending, reaching, using stairs, lifting up to 16 kg (35 lbs), and handling tasks like scanning, filing, and using a phone.
Comfort working in a fast-paced, high-volume environment with firm deadlines.
Legal eligibility to work in Canada.
Ability to work flexible hours, including nights, weekends, and holidays, as required in a resort setting.
Due to limited public transportation options, candidates must have reliable means of transportation to and from Mount Washington.
