We are currently seeking a detail-orientated

Smokehouse Operator

to support our overnight operations. This position reports directly to the Smokehouse Supervisor and is considered critical in nature.

As one of the last steps in the production process, the smokehouse operator is responsible for, and ensures that, all cooking and cooling of smoked meats are completed to spec, in preparation for next day packaging.

The successful candidate must be available to work

NIGHTS

Monday - Friday (40 hours per week). Occasional overtime may be required based on daily production schedules.

Experience in cooking and smoking meat, or industrial food manufacturing & production is considered an asset.



Responsibilities include but are not limited to:



Enforce, follow, and understand responsibilities regarding occupational health and safety, CFIA/HACCP regulation, and safe food handling procedures. Review daily production records to determine cooking times and product prioritization. Rotate, push, and pull wheeled racks of cooked products out of the smokehouses to shower, observe product for quality, and relocate into designated cooling areas. Investigate and troubleshoot any program discrepancies or mechanical failures. Fill sawdust pails at the end of each shift, ensuring that they are ready for the day crew. Monitor generators and color development of products, adjust temperatures as required. Monitor computer readout to ensure the correct temperature of the product is reached upon cycle end. Verify with manual thermometer. General housekeeping and cleaning of areas associated with the smokehouse, staging area, fast chill, coolers etc. Perform additional tasks as requested by Supervisor/QA.

This position can be physically demanding at various intervals throughout a shift. Candidate must have the ability to push or pull up to 60lbs. Must be tolerant of changing temperatures in working production areas (warm/cool).

Demonstrated ability to be reliable, disciplined, manage time efficiently, take direction, and prioritize assigned tasks is crucial.

Schedule: Monday to Friday (permanent, full-time)
Shift: 6:00PM - 2:30AM

Job Type: Full-time

Pay: $39,520.00-$47,840.00 per year
