Key Responsibilities
Mix, knead, shape and proof dough for breads, rolls, pizza crusts, and other baked products according to recipes and production schedules.
Operate ovens, deck ovens, convection ovens, proofers, and other baking equipment safely and efficiently.
Bake items to specification--monitor temperatures and bake times to ensure consistent texture, color and doneness.
Produce daily batches of bread, buns, hoagie rolls, and specialty items; portion and scale dough to maintain consistent yields and portion control.
Prepare and finish pastries, flatbreads, and any sweet or savory baked items required for menu service.
Toast or finish rolls and breads to order when required for sandwiches and hoagies.
Handle multiple batches and production tasks simultaneously in a high-volume line service environment.
Maintain clean, organized baking and prep stations; follow food safety, hygiene, and sanitation standards at all times.
Monitor ingredient stock (flour, yeast, butter, etc.), rotate inventory, and notify management when supplies are low.
Communicate with kitchen staff and servers to ensure timely and accurate order fulfillment for service and special requests.
Assist with prep work, cleaning, and other kitchen duties during downtime as needed.
Requirements
Previous experience as a baker, pastry cook, or in a similar kitchen position.
Strong knowledge of baking fundamentals: dough handling, proofing, fermentation, scaling, and oven management.
Ability to work efficiently in a fast-paced, high-volume environment while maintaining quality and consistency.
Excellent attention to detail for portion control, timing, and presentation.
Familiarity with food safety practices and proper sanitation procedures (e.g., HACCP/food handler basics).
Ability to multitask and manage several production items at once without compromising quality.
Physical ability to stand for long periods and safely lift up to 50 lbs.
Willingness to work flexible hours, including early mornings, nights, weekends, and holidays.
Preferred Qualifications
Culinary or baking/pastry certification or formal training.
Experience in a bakery, patisserie, or restaurant with open-kitchen / line service.
Experience preparing laminated doughs, viennoiserie, or artisan loaves.
Familiarity with dough recipe scaling, yield calculations, and basic inventory control.
Physical & Scheduling Notes
This position may require long periods of standing, repetitive motions, and occasional lifting of heavy items (flour sacks, trays). Early shift availability and flexibility for weekends/holidays is preferred.
