Company Introduction: T&T Supermarket Inc. was founded in 1993 with two stores in BC. Since then, it has expanded rapidly and is now Canada's largest Asian supermarket chain with 37 stores across the country: 14 in BC, 7 in Alberta, 14 in Ontario, and 2 in Quebec. The Company's continuous expansion is going to bring more new stores in the next couple of years.
The Role: Reporting to Operations Manager, the Relief Head Cook is primarily responsible for hands-on support to Store Kitchen Department/Central Kitchen Production of assigned products. She/he also assists Technical Specialist in providing guidance and training to production staff to ensure the daily food production and working conditions are compliance to company food safety standard and corporate policies.
Major Responsibilities: Assist Technical Specialist for production of hot Asian specialty foods and authentic BBQ products by applying the production techniques created by T&T.
Assist Technical Specialist to monitor the execution of the tasks with precision matching T&T's standards of operation.
Assist Technical Specialist to source the most suitable ingredients for food production.
Responsible for inventory control and maintenance of ingredients through T&T's EIS system to control quality and cost.
Test and create Chinese traditional festivals cuisines/recipes.
Support production of Store Kitchen Department/Central Kitchen for assigned products (BBQ, Hot Food, Dim Sum, Sushi and Other Finished or Semi-finished Products)
Ensure recipes, ingredient specifications, quantity, quality, cooking time as stated in the SOPs are being executed.
Provide guidance and training to production staff to ensure the daily food production and working conditions are complying to company food safety standard and corporate policies.
Audit product quality, food safety, freshness and ensure FIFO is strictly practiced within the department.
Travel and support the Store Kitchen Department / Central Kitchen for assigned products.
Knowledge, Skills and Ability Requirements: Possess 5 years or above relevant experience with at least 3 years of supervisory experience preferred.
Possess knowledge, skills, and experiences in making Kitchen products (BBQ, Hot Foods, Dim Sum)
Possess knowledge in workplace health & safety and food safety (Food Safe Certification requires)
Able to communicate in English and Chinese (Cantonese &/or Mandarin)
Flexible to work in various shifts, including weekdays, weekends, holidays, morning, and evening hours
Able to travel to stores locally and to other regions as required.
