Job Overview



NICLI Pizzeria is seeking an experienced, hands-on

Kitchen Manager

to lead daily kitchen operations in a busy, quality-driven restaurant. This role is ideal for a strong leader who is equally comfortable

managing the kitchen and working on the line

, specifically preparing

Neapolitan-style pizza and fresh pasta

.

As a key member of the management team, you will ensure consistency, food quality, safety standards, and team performance--while actively supporting service during peak hours.

Key Responsibilities



Kitchen Operations & Cooking (Hands-On)



Actively prepare and cook

pizza and pasta

during service Oversee food preparation, cooking, and presentation to maintain NICLI's quality standards Ensure consistency across all dishes, following established recipes and procedures Support the line during busy periods and lead by example

Leadership & Team Management



Supervise, train, and motivate kitchen staff Interview, hire, onboard, and schedule kitchen team members Conduct performance evaluations and ongoing training Foster a positive, respectful, and team-oriented kitchen culture

Food Safety & Quality Control



Ensure full compliance with food safety, sanitation, and health regulations Maintain cleanliness and organization throughout the kitchen Monitor proper food handling, storage, labeling, and FIFO procedures

Inventory & Cost Control



Manage inventory, ordering, and supplier coordination Control food costs, waste, and portioning Ensure all kitchen equipment is properly maintained and operational

Collaboration & Service Excellence



Work closely with front-of-house leadership to ensure smooth service flow Assist with menu development and seasonal updates Support a high standard of hospitality and guest satisfaction

Required Skills & Experience



Proven experience as a

Kitchen Manager, Sous Chef, or Lead Cook

Strong background in

pizza and pasta cooking

Hands-on leadership style -- comfortable working the line Solid knowledge of food safety and sanitation standards Experience managing inventory, food costs, and kitchen operations Ability to lead, train, and develop a team in a fast-paced environment Familiarity with POS systems (Micros POS an asset) Strong communication, organization, and time-management skills

Nice to Have



Experience in Italian or Neapolitan-style kitchens Hospitality or hotel background Menu development experience Passion for quality ingredients and scratch cooking
