Run a kitchen that supports both Crafters Smokehouse (smoked meats & comfort sides) and Famous Peppers (artisan pizza), plus banquet production. You'll own consistency, food safety, and cost control while building a calm, well-run line.
What you'll do
Oversee daily kitchen operations: prep, line during service, closing. Manage cooks, dough makers, prep staff, and assist with hiring/training.
Maintain recipe fidelity for smoked meats, sides, and pizza (we're running multiple concepts under one roof -- consistency is key).
Implement and enforce food-safety systems (HACCP-style checks, cleaning schedules). Work with sanitation procedures for large equipment (e.g., Hobart 60 qt mixer, dough sheeter, pizza ovens).
Plan prep and staffing for banquets and special events; coordinate large-format production with the General Manager.
Control food cost, manage inventory and orders, and reduce waste through portion/recipe management.
Troubleshoot equipment, escalate maintenance, and keep production moving.

Consistent, on-time, high-quality plating across smokehouse items, pizzas, and banquet menus.
Food safety compliance and clean inspections.
Tight food costs and accurate ordering that scales for events.

Has prior kitchen leadership experience with both line cooking and cold/hot prep planning.

Pay: $19.00-$23.00 per hour
