Summary
We are seeking a skilled Food Service Manager to join our team at Summerhill Market in the heart of our community. This role is pivotal in ensuring our customers receive exceptional service and high-quality food, contributing to our mission of happiness and joy.
Role and Responsibilities
Core Cooking & Kitchen Operations
Preparing, cooking, and presenting dishes consistently to the restaurant's standard.
Running a kitchen section (grill, sauce, larder, pastry, etc.) independently.
Assisting with menu planning, including seasonal specials and daily features.
Monitoring portion control and minimizing food waste.
Assisting with recipe development and testing.
Team Leadership & Training
Supervising commis chefs, apprentices, and kitchen porters.
Delegating tasks and ensuring workflow runs smoothly during service.
Supporting the sous chef in staff training, coaching, and development.
Providing feedback and encouraging professional growth of junior staff.
Stock, Ordering & Cost Control
Assisting with stock rotation and inventory checks.
Helping place orders with suppliers and verifying deliveries.
Ensuring proper storage of ingredients to maintain freshness and reduce waste.
Health, Safety & Compliance
Enforcing food hygiene and kitchen safety standards at all times.
Maintaining compliance with HACCP and local food safety regulations.
Monitoring cleaning schedules and ensuring all equipment is maintained.
Responding to and preventing potential hazards in the kitchen.
Operational & Management Support
Taking charge of the kitchen in the absence of the sous chef or head chef.
Communicating effectively with front-of-house staff to ensure smooth service.
Assisting in performance reviews and recruitment of kitchen staff.
Supporting the head and sous chef in implementing new systems and standards.
Contributing ideas for improving kitchen efficiency and customer satisfaction.
Qualifications
Culinary diploma, degree, or equivalent professional cookery qualification (often preferred but not always required).
Food Safety and Hygiene certification
Knowledge of health and safety regulations.
Experience managing a kitchen section and assisting with supervision of staff.
Proven track record of delivering high-quality dishes in a fast-paced environment.
Skillset requirements:
Ability to work well with others and be part of a team
Proper rotation of ingredients and inventory
Ability to use scales to weigh foods and proper operation of equipment
Assist as required with packaging and pricing
Expert knowledge of products, preparation, and safe handling
Ability to stand, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing up to 50 pounds or less
Ability to follow written and oral instructions
Ability to work varying shifts, weekends, and holidays.
