Red Seal Certificate
? At least one year experience with cooking: experience in Long Term Care/Residential Care setting considered an asset.
? Valid (within 5 years) Food Handler's Certificate.
? Must be able to read, comprehend and follow dietary instructions, menus and recipes.
? Must be able to take directions and work independently.
? Must exhibit empathy and understanding of elderly residents and their needs.
? Good oral/written communication skills.
? Able to work with computers.
Responsibilities:
Facilitates the ongoing operation of the Dietary department through the completion of the following major responsibilities:
1) Meal Preparation:
o Plans and prepares meals according to established standards, procedures, recipes, and menus, including preparing special meals to meet appropriate therapeutic menu modifications as needed.
o Ordering of supplies based on established menus from approved vendors. o Proper utilization of food with consideration for costs and incorporating leftovers and eliminating waste wherever possible.
o Ensures dining room is set for meal service.
o Development of standardized recipes
o Receives and stocks supplies.
o Maintain a monthly inventory record.
2) Sanitation and Hygiene:
o Follows proper sanitation procedures in the handling, preparation, and distribution of food.
o Maintains clean work area.
o Ensures dish sanitation after meals.
o Ensures clean work area and equipment/appliances are regularly cleaned.
o Storage areas are kept clean, neat and in order.
o Cleaning schedule followed.
o Follow guidelines for Hand Hygiene at all times.
o Ensure familiar with Dietary Infection Control precautions and Outbreak Guidelines.
o Ensures items to be recycled are rinsed and put in appropriate bins.
o Ensures all Audits completed, e.g., temperature of audits of food, dishwasher, cooler/freezer.
3) Continuous Quality Improvement:
o Ensure feedback from residents, families and staff regarding any food complaints are acted upon to improve service provided.
o Assist in updating dietary policies.
o Ensure annual education requirements for WHMIS; fire safety; hand hygiene, and Food Handlers certification (every 5 years) are met.
o Participate on committees as requested in the Home.
o Assist in orientation of new dietary staff.
o Ensure safe work practices, report unsafe conditions immediately, and attend all relevant in-services regarding Occupational Health and Safety.
o Perform additional related duties as assigned.
