1. Garde Manger (Cold Kitchen Chef)
We need an organized and creative Garde Manger to handle the preparation and plating of cold dishes. This role is crucial for our presentation and ensuring the highest quality in every plate that leaves the kitchen.
Key Responsibilities:
Prepare and Plate all cold items, including appetizers, salads, garnishes, and certain specialized cold dishes, maintaining high standards for visual appeal and consistency.
Manage Cold Station: Ensure the cold prep area is clean, organized, and properly stocked for service.
Food Safety: Adhere strictly to all food safety and sanitation guidelines, monitoring and recording food temperatures for all cold storage.
Prep Work: Execute detailed knife work and bulk preparation of vegetables and ingredients for the cold line.
Inventory: Assist in managing inventory and communicating cold station supply needs to management.
2. Fry Cook
We are looking for a focused and fast-paced Fry Cook to manage our deep-frying station. You'll be responsible for the perfectly crispy texture of our hot menu items.
Key Responsibilities:
Operation and Safety: Safely operate and maintain the deep fryers, ensuring oil temperatures and quality are consistently monitored.
Cook to Order: Fry food items (such as tempura, gyoza, and other hot appetizers) precisely to order, ensuring perfect cooking times and consistency.
Set Up & Break Down: Prepare the frying station for service and perform end-of-shift cleaning and maintenance (filtering oil, cleaning equipment).
Quality Control: Ensure all fried products meet our internal quality standards before being passed to the plating station.
Collaboration: Work seamlessly with the rest of the kitchen team to maintain ticket times during busy periods.
Requirements (Both Positions)
Proven experience in a high-volume restaurant kitchen environment is preferred.
Ability to work full-time, including evenings and weekends, as required by the restaurant industry.
Strong knowledge of food safety and sanitation best practices.
Ability to stand for extended periods and lift up to 25 lbs.
Calm demeanor and ability to thrive under pressure in a fast-paced environment.
For Garde Manger: Excellent knife skills and strong attention to detail in plating.
For Fry Cook: Experience with deep fryer operation and maintenance.
