Cuthbert House is an Open Custody / Open Detention residential facility for male youth between the ages of 12 -17, who are involved in the criminal justice system. The Cook's primary job is to prepare and serve nutritious meals as outlined on menus and in accordance with the Canada food guide and safe food handling. This position provides efficient, safe, and secure operation of an open custody facility kitchen and dining room through a high level of food preparation, resident supervision and staff team support.

KEY RESPONSIBILITIES:

Program Cook

  • Comply with policy and procedures as outlined in The Youth Criminal Justice Act, Cuthbert House's policy and procedure manual, The Ministry of Children, Community & Social Services Standards and Guidelines and Operational Policy and Procedure manuals
  • Keep kitchen and pantry in good order and in compliance with Fire / Health and Building codes
  • Ensure proper nutritional guidelines are observed as per the Canada Food Guide
  • Prepare and serve meals and prepare for special dietary needs
  • Keep record of meal preparation and delivery
  • Follow and ensure guidelines for safety and security in the kitchen and during meal preparation
  • Monitor and control food consumption
  • Maintain record of all meals
  • Shop for food supplies
  • Maintain budget
  • Conduct comparison-shopping
  • Provide receipts
  • Keep an up-to-date inventory of food supplies
  • Rotate food stocks
  • Ensure food storage areas in basement and pantry are clean and in good order
  • Keep an inventory of all kitchen equipment such as small appliances, utensils and especially sharps
  • Bring any concerns immediately to the attention of staff in charge as well as Assistant Director and Director
  • Report any damages to staff in charge as well as Assistant Director and/ or Director
  • Supervise clients' activities in the facility work areas as well as clients you take into the community. (i.e., grocery shopping days)
  • Provide supervision of clients assigned to "clean up" routines in kitchen pantry and dining area
  • Assist program staff in teaching residents basic food preparation skills
  • Review menus and maintain kitchen inventory
  • Complete Sundry duties for required housekeeping and maintenance duties in the facility including training in Safe Food Handling and preparation
Client Program & Services
  • Full participation for all staff, students, volunteers, and youth to follow and adhere to and be incompliance with the territorial health & safety processes and legislative requirements, including training
  • Participate on the H&S Committee
Sundry Duties - As required
  • Provide support and feedback to student placements
  • Complete Sundry duties for required housekeeping and maintenance duties in the facility including training in Safe Food Handling and preparation
Perform other duties as required.

WORKING CONDITIONS:
  • This is a full time position based on 28 hours per week. Monday to Friday 11:00am -5:30pm
  • Working environment is typically in the facility in the kitchen in generally agreeable conditions
  • The working environment is an open custody / open detention setting and at times the youth may become aggressive/hostile/ combative
  • Regular travel to and from the grocery stores
  • Some unscheduled overtime maybe associated with this position
  • Working environment is typically in an office setting with generally agreeable conditions
QUALIFICATIONS AND EDUCATION REQUIREMENTS:
  • A High School Diploma
  • Safe Food Handling Certificate
  • Valid CPR and First Aid Certificates
  • Alternative combinations of education and experience may be considered
EXPERIENCE AND KNOWLEDGE:
  • Cooking for large groups
  • Knowledge working in a fast-paced environment
SKILLS AND CAPABILITIES:
  • Written and verbal communication skills - clear and simple to understand
  • Experience working with high needs youth
  • Support the Salvation Army Correctional & Justice Services Cuthbert House Mission statement in a practical manner
  • Good judgement
  • Approachability and supportive
  • Respect and understanding of The Salvation Army - its mission, culture, and values
  • Able to proactively recognize potential risks and issues, respond with solutions
  • Fluent in the French language, an asset
