Job Description

The Position:



We are seeking a seasonal full-time First Cook to join our team. In this role, you will play a key part in delivering high-quality meals for our members and guests in the Club's restaurants and special events. Reporting to the Director of Food & Beverage / Executive Chef and working closely with the Sous Chefs, you will handle service line duties, preparation work, and banquet preparation. This position requires flexibility for morning, evening, holiday, and weekend shifts as needed.

First located on Canadian Pacific Railway lands, the Club moved in 1960 to the ancestral site of the Musqueam Nation's winter village. Over the years, we have proudly hosted prestigious events and world-class figures in golf and tennis. Today, our Club features an award-winning clubhouse, a highly ranked golf course, indoor and outdoor tennis courts, a fitness center, and a state-of-the-art golf performance facility.

Key Responsibilities:



Consistently prepare dishes according to standardized recipes, demonstrating strong knowledge of food preparation, presentation, and service techniques. Review daily production sheets with the Sous Chef and efficiently prepare food items in accordance with Club standards. Provide exceptional, personalized service to members and their guests, ensuring a high-quality dining experience. Minimize overproduction and food waste while ensuring proper inventory rotation, labeling, and storage of all ingredients and prepared items. Operate kitchen equipment safely, follow established safety protocols, and report any deficiencies or maintenance issues. Handle, store, prepare, and serve food in strict adherence to food safety regulations, including HACCP and Club guidelines. Take ownership of your assigned food station, ensuring cleanliness, organization, and readiness for service. Stay up to date on health and safety standards, workplace safety, and Club regulations. Assist with banquet and event preparation as needed, ensuring seamless execution of Club functions. Work collaboratively with the culinary team and front-of-house team members to maintain a smooth and efficient dining experience. Contribute to menu development by providing feedback or ideas for specials when required. Help train and support junior kitchen crew members as needed. Perform other duties that may be assigned by any member of the management team.

Qualifications and Requirements:



Minimum of 6 years of cooking experience in an upscale hospitality environment. Experience in a private club setting is an asset. Red Seal Certification (Journeyman's papers) or a recognized international equivalent is preferred. Food Safe Level 1 certification required. Strong verbal and written communication skills in English. Ability to work flexible hours, including mornings, evenings, weekends, and holidays. Must be legally authorized to work in Canada.
