Carlino is a Michelin-inspired Northern Italian kitchen operating at the highest level inside one of Vancouver's premier luxury hotels. About the Role:



As a 1st Cook on our day team, you'll be at the heart of production and service, cooking over fire, perfecting pan work, and executing refined Northern Italian dishes with precision. This is not a training position -- it's a role for a skilled, self-motivated, trustworthy cook who understands traditional pasta making, respects the craft, and wants to work beside chefs who push to a higher level every day. You'll contribute to a menu built on regional Friulian flavours, game meats, handmade pasta, and seafood cooked with discipline and finesse.

Key Responsibilities:



Execute hot line dishes with accuracy, speed, and consistency Produce traditional house-made pastas, sauces, ragus, soffritti, stocks, and reductions Work confidently with game meats, butchery, and West Coast seafood Maintain an impeccably clean, organized station and adhere to HACCP standards Collaborate with chefs to execute prep, service, and end-of-day systems Bring a high level of independence, responsibility, and follow-through
Requirements:

5+ years of professional kitchen experience with strong hot-line competency Proven skills in traditional pasta making, sauce work, and pan/stove cooking Experience with butchery, game, and seafood prep strongly preferred Food Safe certification required Must have open availability (no scheduling restrictions) Passion for Northern Italian cuisine and working at a Michelin-standard level Self-motivated, detail-driven, dependable, and committed to the craft
