Medicine Hat Lodge is seeking a talented and dedicated Sous Chef to join our culinary team. This dynamic role requires a versatile culinary professional to oversee the daily operations of our family restaurant, pub, and banquet facilities. The ideal candidate will have a passion for delivering exceptional dining experiences, strong leadership skills, and a comprehensive knowledge of various culinary techniques.

Key Responsibilities:



Culinary Operations:



Assist the Executive Chef in managing the kitchen operations for the family restaurant, pub, and banquet facilities. Ensure consistent food preparation and presentation that meet Medicine Hat Lodge's standards of quality and excellence. Create and execute diverse and innovative menus, including special dietary requirements and seasonal offerings.

Staff Management:



Supervise and train kitchen staff, including line cooks, prep cooks, and dishwashers. Foster a positive and productive work environment through effective communication and teamwork. Schedule and coordinate kitchen staff shifts to ensure efficient coverage and operations.

Inventory and Cost Control:



Monitor food inventory and supplies, placing orders as needed to maintain optimal stock levels. Assist in managing food costs and minimizing waste through efficient kitchen practices. Conduct regular inventory checks and ensure proper storage and labeling of ingredients.

Health and Safety:



Ensure compliance with health, safety, and sanitation standards in all kitchen areas. Conduct routine inspections to maintain cleanliness and organization in the kitchen. Implement and enforce food safety protocols, including proper handling, storage, and preparation of food items.

Customer Service:



Collaborate with front-of-house staff to address guest inquiries and special requests. Maintain a visible presence in the dining areas during peak service times to interact with guests and receive feedback. Strive to exceed guest expectations by delivering high-quality culinary experiences.

Banquet and Event Coordination:



Work closely with the events team to plan and execute banquet menus tailored to specific occasions and guest preferences. Oversee the preparation and presentation of banquet dishes, ensuring timely and efficient service. Assist in developing creative and attractive food displays for buffet and banquet setups.

Qualifications:



Proven experience as a Sous Chef or similar role in a high-volume restaurant or hotel environment. Strong and diverse culinary skills. Experience in banquet and event catering is highly desirable. Excellent leadership and team management abilities. Proficient in inventory management and cost control. Comprehensive knowledge of food safety and sanitation regulations. Ability to work flexible hours, including evenings, weekends, and holidays. Culinary degree or equivalent professional experience is preferred.
