Position Summary:

The Executive Sous Chef is responsible for the preparation and execution of high-quality culinary offerings in accordance with company standards, menu specifications and production schedules. This position is also responsible for overseeing all culinary operations and being an exemplary leader at all times, while meeting required safety, hygiene and quality standards. The Executive Sous Chef will be working closely with the Chef de Cuisine and will assume the lead role in the absence of the Chef de Cuisine.

What will you be doing?

You will be responsible for performing the following tasks to the highest standard:

  • Provide support and assistance to the Chef de Cuisine in overseeing all kitchen operations
  • Oversee the culinary aspects of Banquets for Hotel Eldorado & Lakeside Dining
  • Consistently offer professional, friendly, and warm hospitality to all guests
  • Ensure proper staffing levels are maintained to deliver quality service within budgeted labour
  • Liaise closely with the Chef de Cuisine, Resort Executive Chef, and Food & Beverage Managers to ensure that event and restaurant needs are met, and that work is completed in accordance with our standards
  • Play an instrumental role in organizing and maintaining an efficient flow of production
  • Ensure the highest quality of product by supervising and participating in the preparation of quality cuisine
  • Ensure the consistency and quality of all meals created (seasoning, portion size, appearance)
  • Assist the Chef de Cuisine with ordering and managing food costs closely, while maintaining our high-quality standard
  • Oversee delivery and unloading of products and produce to ensure quality and freshness
  • Follow and enforce all health and safety standards and procedures
  • Inform the Chef de Cuisine promptly and fully of problems or urgent matters
  • Motivate employees in order to maximize employee productivity
  • Contribute to the morale and well-being of the kitchen team by exemplifying CREW values
  • Supervise, direct and train staff in the performance of their duties
  • Ensure proper storage of fresh products and other food items
  • Assist in the training and development of new staff and junior cooks
  • Demonstrate hands-on management approach to lead our team
  • Continuously seek ways to minimize operating expenses and drive all revenue streams
  • Build and maintain effective relationships with guests, crew members and management
  • Demonstrate high personal integrity, business ethics and take every opportunity to promote the hotel\xe2\x80\x99s dining outlets
  • Provide speedy resolutions for any issues that arise during a guest\xe2\x80\x99s dining experience
What are we looking for?
  • Completion of a certified culinary program at a recognized institution
  • Red Seal Certification, plus five years progressive culinary experience in a high-volume fine dining restaurant
  • A minimum of 2-years\xe2\x80\x99 management experience in a kitchen environment
  • Experience with purchasing, receiving and inventory control
  • Good knowledge in Microsoft Office applications (Word, Outlook, Excel)
  • Demonstrated ability to deliver exceptional customer service
  • Sincere interest in creating exciting dishes that exceed the expectations of our guests
  • Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively
  • Experience with documenting and enforcing food safety procedures and workplace safety procedures
  • Financial understanding in food costs and minimizing wastage in the kitchen
  • Strong time management, attention to detail, organizational and multi-tasking skills
  • Ability to remain calm in stressful situations and work in a fast-paced environment
  • Possesses strong leadership skills and values employee development and retention through strong performance initiatives
  • Possesses the capability to make sound, data driven business decisions
  • Strong technical skills and creativity
