The Distillery Restaurants Corp., creators of Cluny Bistro, El Catrin, Pure Spirits Oyster House & Grill, Madrina Bar y Tapas, District Pizza, Jardin and Distillery Events (Archeo and The Loft) are seeking an experienced and innovative Executive Chef to lead our team with passion and a love of Spanish cuisine. The ideal candidate is not only an exceptional chef, but a great teacher and mentor with a strong growth mindset. They not only understand that exceptional food is at the heart of hospitality but that they are an ambassador to Toronto's unique food and beverage culture.
Madrina Bar y Tapas is an award-winning Spanish restaurant with its eye on a Michelin star. At Madrina, we focus on seasonal products alongside authentic ingredients from Spain to re-imagine a menu that marries innovation and fun with Spanish classics. Our team brings a wealth of hospitality expertise from hotels and fine dining restaurants in Canada, Spain and throughout the world.

What you will be doing:

• Share Madrina's vision with all BOH team members and lead by example.
• Reinforce the DRCs mission and priorities for the employee- and guest experience, and inspire the team with your exciting vision for the future.
• Continually researching and developing ideas including evaluating the competition, to live on the cutting edge of high end cuisine
• Responsible for all food costing, menu writing and implementation.
• Responsible for maintaining and improving food and labour costs as per Director of Culinarys direction and established budgets.
• Actively involved with training of all staff, both in the back and front of house.
• Maintaining standards as established by the Director of Culinary and DRC while operating a safe, sanitary and hygienic work environment as per the Public Health department.
• Assisting with the hiring, onboarding and training and development initiatives as well as performance management and employee coaching.
• Other duties as required and/or assigned.

What youll bring to the kitchen:

• EXPERIENCE. You have at least ten (10) years of cooking experience with Spanish cuisine. Youve led a busy kitchen for at least five (5) years, and have demonstrated progressive growth within a high-volume, fine dining restaurant environment.
• PASSION. You have a genuine passion and drive to create - both great food and great talent. You love teaching and sharing your knowledge with your team.
• EDUCATION/TRAINING. You have a culinary degree/diploma and/or the equivalent in education and experience.
• LEADERSHIP: You pride yourself in being able to collaborate with others and to lead a team by healthy example.
• COMMUNICATION SKILLS. You demonstrate exceptional relationship building and communication skills among your team members at the restaurant in both BOH and FOH.
• ADAPTABILITY. You thrive in a fast-paced, changing environment.
• A DRIVE TO BE THE BEST. You have worked in Michelin star kitchens and know what it takes to deliver an exceptional and memorable culinary experience.
• CREATIVITY. You are most engaged when youre trying new things in the kitchen. You have a passion for molecular gastronomy, current trends, unique ideas and experimenting with Spanish cuisine.
• STRONG WORK ETHIC. You must be ready to truly lead this restaurant with a willingness to work nights, weekends, and statutory holidays when needed. This is a hands-on role rather than an office job.
