The Kluane Lake Research Station in the Arctic Institute of North America is currently seeking a Full-time Temporary (Short Term) Executive Chef for approximately 5 months. As Executive Chef, your key purpose includes responsibility for food preparation and dining services, in a timely manner, for groups of up to 100 participants. The Executive Chef, is responsible for the management of a large kitchen and food service area. This position reports to the Station Manager, Kluane Lake Research Station (KLRS). Under minimal supervision, is responsible for the management of a large kitchen and food service area as Executive Chef. The Executive Chef assumes full responsibility of the kitchen and food service area. You will oversee and co-ordinate all food preparation and food services in the kitchen. You will be responsible for the ordering of food supplies, and you will assume full responsibility for special function assignments. Your duties will also include ensuring the safe, efficient food production and cleanliness for a busy kitchen and dining area. The Arctic Institute is home to the Kluane Lake Research Station (KLRS) which is located 220 km northwest of Whitehorse, Yukon, on the south shore of Kluane Lake, on the traditional lands of the Kluane, Champagne-Ashihik and White River First Nations (Silver City, Yukon, Canada). Position Description Summary of Key Responsibilities (job functions include but are not limited to):
Duties include: cooking and preparing meals, preparing food trays, cleaning and peeling vegetables, preparing salads, making cookies and laying out materials for bag lunches
Maintains the cleanliness of all ovens and stoves, floors, refrigeration units, dry cupboards, and overall cleanliness of the kitchen
Ensures that annual and semi-annual major cleaning and maintenance of all appliances is performed by a professional
Accountable for ensuring all menus are planned and prioritized appropriately based on requirements
Accountable for assisting with safe, efficient food production and cleanliness for a busy kitchen and dining area
Cooks or directly supervises the cooking of items that require skillful preparation
Solicit guest feedback to improve food and presentation quality and investigate customer complaints
Works very closely with all staff to coordinate groups booked and special requirements
Schedules and coordinates the kitchen employees to assure that food preparation is economical and technically correct
Ability to maintain required production with a demonstrable focus on sustainability and minimum wastage
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times
Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment
Ability to accept constructive criticism
Must be dependable and punctual and able to manage own time and assignments
In-scope supervision and fully train all kitchen staff
Assist with the interviewing and selection process for all kitchen staff
Assume responsibilities in-line with station management for those infrequent times when the station manager is not at KLRS
Qualifications / Requirements:
Considerable knowledge of the organization and procedures common to the food service industry
Must have Red Seal Certification and a minimum of 5 years related experience
Considerable knowledge of purchasing specifications and procedures related to meats, fresh produce, dry stores, supplies and equipment operation
Considerable knowledge of food storage procedures, food value and nutrition
Working computer software knowledge such as email, Word, and Excel
Able to communicate and work well with others in a kind, thoughtful, and respectful manner
Always be pleasant, polite, respectful, and courteous
Required to take the WHMIS and Standard First Aid/CPR-C within 6 months of hire if you are not already trained
