Overview: We are seeking a talented Executive Chef to join our team. The ideal candidate will have a passion for culinary excellence, leadership skills, and a creative approach to menu development. Direct Reports: All back of house staff (cooks and dishwashers) and front of house service staff. Responsible for: Under the direction of the General Manager, Chef is responsible for the entire back of house operation within the Willows Restaurant and related areas of Kamloops Golf & Country Club. General Responsibilities:
To ensure the proficient operation of all food and beverage within the budgetary guidelines provided.
To provide the best possible food and beverage experience possible within the operating budget.
To work cooperatively with the other managers to ensure the highest levels of guest satisfaction and positive experiences.
To schedule, supervise, coach, develop and train all back of house staff in both food preparation and service utilizing industry standards for health and safety procedures.
To communicate (both written and verbally) in a professional and timely manner to fellow managers, Board members, staff, and guests.
To conduct yourself at all times in a polished, business-like manner, beyond reproach, to maintain yourself as a leader with respect to all guests and staff and to strive to maintain the image as \xe2\x80\x9cAmbassador\xe2\x80\x9d of the Golf Club always.
To ensure the overall presentation of the Golf Club is held in high regard by its members, guests and staff and is recognized as a premier golf operation.
To be highly self-motivated and prepared to work with little or no supervision to plan, supervise and execute all aspects of restaurant management.
Chair the House Committee and provide a monthly report of Committee meetings during the golf-season.
Detailed Responsibilities: Back of House
To operate and promote The Willows Restaurant to a high standard while operating within the approved operating budgets for the golf club.
To oversee all menu planning, food ordering, inventory control, the service delivery of the food products and well as the recording and balancing of the food revenues.
To select and prepare the \xe2\x80\x9cgolf club\xe2\x80\x9d style meals with the greatest appeal to our members and guests.
To order food products from reputable suppliers and to ensure product standards are high and meet the expectation of our members and guests.
To complete a month end inventory count of all food and supplies on the last day of each month. The report must be complete and submitted no later than the 4th of each month.
To oversee and assist with the maintenance and repair of all equipment pertaining to the food and beverage departments.
Detailed Responsibilities: Administration and Human Resources
To ensure the security of all inventory and equipment related to the food and beverage department including the building itself.
To keep accurate and complete records on payroll, inventory, and budgeting and to provide this information to the GM when requested.
To assist in preparing an annual food and beverage budget and a capital plan for the department and to participate in all long-range planning meetings.
To coordinate and oversee the completion of all renovations within the food and beverage areas of the club.
To implement and enforce a comprehensive safety program for employees, members, and guests on course in compliance with local, municipal, and provincial laws.
To interview, hire, train, direct and supervise a staff of employees for the purpose of maintaining food practices and to ensure proper scheduling and routing of personnel and equipment to accomplish the work.
To develop a team-oriented environment and to provide leadership, motivation, and direction to staff including timely and ongoing training, regular communication and feedback, and annual formal performance evaluations.
To develop and maintain comprehensive job descriptions outlining required qualifications, education, experience, training, and the assigned pay grade for all back of house employees.
Detailed Responsibilities: Front of House
Ensure all inventory is kept at manageable levels and order beverage inventory/pick-up as required.
Schedule all Front of House staff ensuring that CBA agreements for senior positions are being met.
Ensure all liquor inspection documents are always readily available at the bar, including smart serve for all employees.
Create detailed staff BEO\xe2\x80\x99s for each private function or large group so staff have clear roles and responsibilities.
Requirements:
Primarily inside work within a restaurant and office environment.
Non-smoking office.
Must be able to meet deadlines as required.
Must work efficiently in a non-supervised position.
Will be required to work on a shift basis, including weekends.
Must be able to work in a fast-paced environment and be able to maintain organization.
