THE OPPORTUNITY:
We are seeking a dynamic and accomplished Executive Chef to lead our culinary team and elevate our already stellar reputation. KEY RESPONSIBILITIES:
Leadership & Line Management
Command and orchestrate the line during high-volume dinner service
Lead by example with hands-on presence during peak service periods
Maintain expediting duties and ensure flawless ticket times
Implement and maintain food safety and sanitation protocols (HACCP, local health regulations)
Manage kitchen workflow, staffing schedules, and station assignments
Team Development & Mentorship Coach, train, and develop junior culinary staff and line cooks
Foster a culture of continuous learning and professional growth
Conduct regular performance evaluations and provide constructive feedback
Create and implement training programs for new hires
Build and maintain a positive, collaborative kitchen culture
Menu Innovation & Quality Control Design and execute seasonal menu items that reflect our upscale casual concept
Develop daily specials that showcase creativity and utilize seasonal ingredients
Maintain consistency and quality across all 60+ menu items
Source premium ingredients while managing food cost targets (28-32%)
Conduct regular menu tastings and recipe refinements
Ensure presentation standards meet our high-end expectations
Operational Excellence, Collaborate closely with the General Manager on budgets, purchasing, and P&L management
Monitor and control inventory, ordering, and waste reduction
Maintain relationships with suppliers and negotiate favorable terms
Oversee kitchen equipment maintenance and cleanliness standards
Implement cost-control measures without compromising quality
Cross-Functional Partnership Work seamlessly with Front of House management to ensure exceptional guest experiences
Communicate effectively regarding menu knowledge, allergens, and special requests
Address guest feedback and dietary accommodations promptly
Support private events and special functions (Capitol 33 events)
Participate in staff meetings and contribute to overall business strategy
WHAT WE'RE LOOKING FOR:
Required Qualifications 5+ years of progressive culinary experience in upscale casual or fine dining environments 3+ years in a Head Chef, Executive Chef, or Sous Chef role Proven track record of leading kitchen teams through high-volume service Red Seal Certification or equivalent culinary degree strongly preferred. Current Food Handler's Certification and HACCP training Comprehensive knowledge of various cooking techniques (seafood, steaks, pasta, desserts) Strong understanding of kitchen economics, cost control, and inventory management Exceptional organizational and time-management skills.

Preferred Experience
Experience with seafood preparation and shellfish (oysters, mussels, lobster) Knowledge of craft cocktail culture and food/beverage pairings Familiarity with dietary restrictions and allergen protocols Experience in restaurants with event/banquet capabilities Comfortable with POS systems and kitchen management software.
