Job Summary
Supervises and participates in large scale preparation, cooking, decoration and service of food on assigned shift. Prepares and cooks entrees, and other foods from menu plan for lunch and dinner, adjusting quantities of food to conform with production requirements. Ensures preparation of sufficient bakery products to fill written requests of various food outlets. Operates food production equipment. Performs meat cutting work, bones fish and fowl, wraps and stores meat. Assists in preparing menus and determining amount of food to meet menu requirements. Plans and supervises the utilization of leftover foodstuffs. Keeps records required. Requisitions necessary supplies from stores. Schedules and assigns work; instructs and trains cooks and general workers. Performs related work as required
Job Requirements
Must be able to read, write, understand and speak English. Working knowledge of standard practices, methods and procedures of large volume food preparation, cooking, decoration, service and storage; personal hygiene, food handling, sanitation and safety precautions; care and use of kitchen utensils, knives and equipment. Experience in commercial food preparation or institutional cooking, including one year in a supervisory capacity. Completion of a recognized vocational course in large volume cooking may be substituted for one year of non-supervisory experience. Proven ability in establishing efficient work methods, supervising and training others in general cooking and kitchen work, estimating quantities and following large volume recipes with a minimum of waste. Ability to maintain effective working relationships with others. Good physical health; must be prepared to take a medical examination. Must be willing and able to work in locations as assigned.
