A propos du role
En tant que Chef(fe) de partie patisserie, vous superviserez la preparation des desserts, viennoiseries, et autres creations sucrees pour les differents points de service (banquets, room service et spa) selon les standards eleves de qualite Four Seasons. Vous contribuerez activement a maintenir un environnement de travail creatif, securitaire et respectueux des normes d'hygiene.
Ce que vous ferez
Participer a la production des desserts, entremets, viennoiseries et autres amenities speciales selon les commandes et les fiches techniques etablies ;
Gerer la mise en place de la station patisserie pour l'envoi des amenities, et differents banquets
Assurer la fraicheur et la qualite des produits, en ajustant la production selon les besoins prevus
Encadrer, former et motiver les membres de l'equipe patisserie ; assurer le respect des standards culinaires et de securite alimentaire ;
Utiliser, entretenir et nettoyer adequatement le materiel specifique a la patisserie : batteurs, laminoir, fours, tempereuses, moules en silicone, etc. ;
Assurer le respect des regles de conservation : etiquetage, datage, temperatures de stockage des produits sensibles ;
Suivre les quantites utilisees, anticiper les besoins, signaler les ruptures et participer aux commandes ;
Veiller a la bonne gestion des couts : controle des pertes, du gaspillage, et de l'utilisation des matieres premieres ;
Collaborer harmonieusement avec les autres departements culinaires et l'ensemble des collegues ;
Participer a la creation de nouvelles recettes, au developpement de la carte et a la mise en valeur des produits locaux et de saison ;
Realiser toute autre tache connexe a la demande des responsables.

5 ans d'experience en patisserie
, de preference dans un environnement hotelier ou gastronomique ;
Maitrise des techniques modernes et classiques de patisserie, chocolaterie, boulangerie et glacerie ;
Experience en supervision souhaitee ;
Capacite a travailler sous pression, gerer plusieurs taches a la fois et respecter les delais de production ;
Connaissance des equipements professionnels de patisserie et maitrise des regles d'hygiene HACCP ;
Flexibilite d'horaire et capacite a travailler debout pendant de longues periodes.

About the role:
As a Pastry Chef de Partie, you will oversee the preparation of desserts, pastries, and other sweet creations for the various service outlets (banquets, room service, and spa) in accordance with Four Seasons' high-quality standards. You will play an active role in maintaining a creative, safe, and hygienic working environment.
What you will do:
Participate in the production of desserts, entremets, pastries, and other special amenities according to established orders and technical sheets;
Manage the pastry station setup for the dispatch of amenities and various banquet services;
Ensure the freshness and quality of products by adjusting production based on forecasted needs;
Supervise, train, and motivate pastry team members; ensure compliance with culinary and food safety standards;
Properly use, maintain, and clean pastry-specific equipment: mixers, dough sheeters, ovens, tempering machines, silicone molds, etc.;
Ensure compliance with preservation rules: labeling, dating, and temperature control for sensitive products;
Monitor quantities used, anticipate needs, report shortages, and participate in ordering;
Contribute to effective cost control: manage waste, loss, and the use of raw materials;
Collaborate harmoniously with other culinary departments and all colleagues;
Participate in the creation of new recipes, menu development, and promotion of local and seasonal products;
Perform any other related duties as requested by management.
What you bring:
MAPAQ food safety and hygiene certification is required;
Strong communication skills in French, both spoken and written (intermediate level);
An intermediate level of English is required to effectively interact with our international clientele and team;
Degree in pastry arts (or equivalent experience) is required;
Minimum of 5 years of pastry experience, preferably in a hotel or fine dining environment;
Mastery of modern and classical techniques in pastry, chocolate work, baking, and ice cream making;
Supervisory experience is an asset;
Ability to work under pressure, multitask, and meet production deadlines;
Knowledge of professional pastry equipment and proficiency in HACCP hygiene standards;
Flexible schedule and ability to stand for long periods.
