A propos du role :
Superviser la preparation des aliments pour le petit dejeuner, le dejeuner et le diner par commande d'invite ou tel qu'assigne par la direction de la cuisine conformement aux exigences de production et aux normes de qualite tout en maintenant un environnement de travail securitaire et hygienique.
Ce que vous ferez :
Participe a la preparation d'aliments selon les commandes d'invites de qualite constante suivant les cartes de recettes, ainsi que les normes de production, de portion et de presentation;
Mise en place complete et mise en place de la station pour le petit dejeuner, le dejeuner et/ou le diner;
Demarrer les aliments prepares a l'avance, en s'assurant de ne pas se preparer au-dela des besoins estimes;
Former, motiver, recommander la discipline et superviser le travail des employes de cuisine en veillant a ce que toutes les normes culturelles et fondamentales soient respectees;
Utiliser, entretenir et nettoyer correctement l'equipement de cuisine, y compris la friteuse, le gril, le poele, le cuiseur a vapeur, le robot culinaire, le melangeur, le trancheur, le four, la table a vapeur, la bouilloire inclinee, le fer a gaufres et le grill a dessus plat;
Datez tous les contenants d'aliments et tournez selon les politiques, en vous assurant que tous les denrees perissables sont conserves a des temperatures appropriees;
Verifiez l'utilisation par quarts, determinez la preparation necessaire, l'attraction du congelateur et la mise en place de la ligne; noter tout article en rupture de stock ou toute penurie possible; retourner tous les aliments qui ne sont pas utilises dans les aires d'entreposage designees, en s'assurant de couvrir ou de dater toutes les denrees perissables;
Aider a etablir des plans et des mesures pour corriger tout probleme de cout alimentaire; controler le gaspillage alimentaire, la perte et l'utilisation par police;
Travailler harmonieusement et professionnellement avec des collegues et des superviseurs;
Aider au travail de preparation des legumes et des condiments au besoin pour le prochain quart de travail;
Realiser toute autre tache ou tout autre projet connexe demande par les responsables de l'hotel.
Ce que vous contribuez :
La certification MAPAQ est requise pour tout poste en cuisine ;
Capacite de communication en francais, a l'oral comme a l'ecrit (niveau intermediaire) ;
Une connaissance intermediaire de l'anglais est necessaire pour comprendre les besoins d'une clientele internationale, expliquer les services offerts, et assurer une experience personnalisee.
L'ecole de cuisine ou l'enseignement d'institut culinaire ou l'experience equivalente ;
Une experience de travail culinaire ou connexe d'au moins cinq ans;
Des connaissances culinaires avancees sont attendues pour ce poste;
L'experience anterieure en supervision est privilegiee;
Les connaissances de travail sont generalement acquises sur le tas;
Capacite de faire fonctionner, entretenir et nettoyer correctement la friteuse, le gril, le poele, le cuiseur a vapeur, le robot culinaire, le melangeur, le trancheur, le four, la table a vapeur, la bouilloire inclinee, le fer a gaufres, le gril a dessus plat;
Competences en couteaux competents et capacite a accomplir plusieurs taches;
Deplacez-vous dans les installations et restez debout pendant de longues periodes;
Doit etre disponible pour les jours de travail, les nuits et les fins de semaine au besoin.

About the role:
Supervise and oversee the preparation of breakfast, lunch, and dinner food items per guest orders or as assigned by kitchen management in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
What you will do:
Participates in the preparation of food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards;
Complete mise en place and set-up station for breakfast, lunch, and/or dinner service;
Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs;
Train, motivate, recommend discipline, and supervise the work of kitchen employees ensuring that all cultural and core standards are met;
Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill;
Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures;
Check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables;
Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies;
Work harmoniously and professionally with co-workers and supervisors;
Assist in prep work of vegetables and condiments as required for the next shift;
Perform other tasks or projects as assigned by hotel management;
What you bring:
MAPAQ certification is required for all kitchen positions;
Ability to communicate fluently in French, both orally and in writing (intermediate level);
An intermediate knowledge of English is necessary to understand the needs of international customers, explain the services offered, and ensure a personalized experience.
Cooking school or culinary institute education or equivalent experience;
Minimum five years culinary or related work experience;
Advanced culinary knowledge is expected for this position;
Previous supervisory experience is preferred;
Working knowledge is generally learned on-the-job;
Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill;
Proficient knife skills and ability to multi-task;
Move about facility and stand for long periods of time;
Must be available to work days, nights, and weekends as required.
