Park Hyatt Sydney is recruiting for a professional Chef de Partie - Pastry Kitchen to join our Pastry team. Join us to redefine luxury.
The main duties and responsibilities for this role will include the following:
Monitors Bakery and Pastry standards in all outlets and banquets.
Prepares and supervises daily mise en place and ensures that all sections are supplied with fresh and high quality products based on anticipated business levels.
Frequently tastes bakery and pastry products in all outlets and be demanding and critical when it comes to Food and Beverage quality.
Establishes and enforces sanitation standards for the kitchen.
The Chef de Partie \xe2\x80\x93 Pastry reports to the Pastry Chef and carries out instructions given by them. They co-operate with all outlet chefs related to their assigned section, ie. restaurant, specialty restaurant and banquets
Prime responsibility is to ensure consistent supply of quality products and correct quantities to all food outlets
Qualifications:
Completion of Pastry Chef Apprenticeship or equivelant
Effective trainer, experienced in the delivery of skills training
Good baking skills
Knowledge and experience in a variety of different cooking methods
Skilled in organisation of staffing, commodities and mise-en-place
2 years work experience as Commis Pastry Chef in a hotel or restaurant with good standards
Previous experience in a leadership role
