Job Description

We are looking for an experienced and knowledgeable Chef de Partie to work in our Kitchen here at the Hilton Hilton Toronto/Markham Suites Conference Centre & Spa.

In this position, you will be responsible for the preparation of all dishes for daily menus, specials, and banquet menus. Ensuring proper set up of each station in readiness for service in accordance with the standards and specifications established by the Executive Chef. You will be working independently as well as in a team in a leadership role.

Qualifications:



Assigns and supervises the work of Team Members in a section, trains Culinary members and apprentices in all areas of their outlet or section.

Plans, co-ordinates, execute and assist in the development of short and long terms goals set by Executive Chef.

Supervises, expedites and participates in food preparation in assigned areas for in all outlets and Banquet production in accordance with standards of quality, quantity, taste and presentation.

Foresees and prepares for any menu request.

Develops daily specials and assists with new menu items for outlets and banquets.

Daily inspections of all food items for his or her station.

Ensures that assigned area is sanitized, properly stocked and well-maintained.

Ensures preparation of mise en place in an area consistent with anticipated volumes.

Follows reference books and standards recipes procedures accordingly.

Conducts food quality assurance (ie; tests food for taste, texture, temperature and presentation)

Ensures and monitors for the operational safety and hygiene of kitchen equipment.

Conducts inventory control (ie; ensures mise en place is fresh, dated and stored for an area)

Prevents over production, spoilage and contamination of food.

Assists in food requisition process.

Complies with hotel policies and procedures.

Performs other tasks as assigned by management.

Requirements:



Food Handler Certification is required

Minimum 5 years hotel experience in Banquets and Saucier capacity

Able to work with minimum supervision in a fast-paced environment

Good command and fluent in English

Must follow Health & Safety procedures

Post-Secondary diploma in Culinary Management
