Executive Chef John Cordeaux and his culinary leadership team are looking for a talented colleague to join an already outstanding team.

The Banquet Chef will be responsible for the creation and service of all catering in our 16,000 square feet meeting space and events in our Entertainment Centre. This is an opportunity to make your mark on this key food and beverage department of the casino.

Key Responsibilities

• Establish the day\xe2\x80\x99s priorities and assign production and preparation tasks for the banquet cooks to execute.
• Review banquet event orders (BEO) on a daily basis and make note of any changes.
• Carries out all food purchases and maintains proper inventory levels guaranteeing cost controls are in place.
• Coordinates frequent workplace inspections and relevant training of all staff and promptly reports any workplace accident or incident.
• Brief the banquet kitchen staff daily about the upcoming and current functions.
• Able to coordinate banquet production and plating with the Executive Chef and Banquet Captain.
• Maintains records of food costs, consumption, sales and inventory.
• Ensures all kitchen stations remain stocked before and during meal periods.
• Manages employee scheduling and performance through training, coaching, evaluation and mentoring.
• Trains all staff to meet company standards of food quality, preparation and customer service.
• Ensures that proper safety, hygiene, and sanitation practices are followed.

What You Bring

• Previous experience in large volume Banquets and production, hotel or catering.
• Passionate culinarian, loves his/her/their job, consummate foodie!
• Demonstrated leadership skills: Ability to motivate and develop others through guidance and coaching.
• 7 years progressive experience in large kitchens.
• Extensive background and passion in quality food creation and presentation.
• Excellent fine dining banquet skills.
• Strong customer service and people management skills.
• Ability to work all shifts as required.
• Computer skills in MS Excel and Word.
