About the role

• To manage the Stewarding Department as an efficient and productive cost centre, by maintaining an organised and clean back-of-house area and by providing all kitchens, outlets and events with clean operating equipment, based on expected business levels.
• Ensure all outsourced contractors complete his or her tasks according to the Stewarding manual by following the correct procedure in the daily / weekly periods.
• To lead the process of HACCP certification and ensure to meet the standard of hygiene requirement for the hotel

Qualifications:

• Two to three years experience in a stewarding function in a hotel or large restaurant with high standards
• Solid knowledge of kitchen hygiene standards
• Well developed computer skills
• Current NSW RSA License
• Experience in leading and motivating team members
