Overview:
We are seeking a skilled Sous Chef to join our team. This position will be responsible for directing food preparation and general kitchen tasks under the supervision our executive chef. Duties also include recommending menu improvements and changes, performing quality checks for foods, adhering to the highest sanitation procedures and standards, monitoring food and equipment supplies, assisting with customer's inquiries, and managing client's complaints. A sous chef must have excellent communication and decision-making skills. This position requires work to be completed at on-site and off-site events and requires a professional demeanor and appearance when dealing with guests. Hours can involve weekends, evenings and early mornings.
Duties:
Leads the kitchen team by delegating tasks, supervising work and performing quality control checks of food items being created.
Supports the Executive Chef / Director of Culinary Experiences, in overseeing daily kitchen operations.
Plays a key role in training and mentoring junior kitchen staff.
Ensure the Madahoki Farm kitchen dress code is followed by all kitchen staff.
Help the kitchen operate as efficiently and effectively as possible.
Assist in the execution of Madahoki Farm on/off-site catering events as delegated and assigned by the Executive Chef / Director of Culinary Experiences.
Helps to prepare and create a variety of menu items suited to events, cultural celebrations and festivals.
Ensuring the food is delivered and served to meet the Madahoki service standards as developed by the Executive Chef / Director of Culinary Experiences.
Prepare meals as per recipe specifications and standards.
Review and understand any food restrictions for the group catering booking.
Assist in the production of new culinary products for sale in the on-site marketplace store, ensuring that all products are accurately labelled with nutritional information and expiry date.
Support the execution of food programs for yearly festival including, but not limited to assisting in producing festival menu items in a timely manner to keep the flow of line-ups to a minimum.
Collaborate with invited chefs and colleagues, and participate as a team member, by performing all such duties as may be assigned and/or needed in the successful delivery of all activities and services offered by Indigenous Experiences.
Be adaptable and willing to do a little bit of everything that our kitchen needs to perform as efficiently as possible.
Maintain a professional demeanor when speaking to guests.
Managing competing priorities in a fast-paced setting.
Assist with the unloading of deliveries and their proper storage.
Communicate kitchen needs to the Executive Chef / Director of Culinary Experiences.
Be available for monthly kitchen/culinary team meetings.
Follow all food health and safety requirements.
Contribute to the provision of a healthy, safe and well-maintained kitchen environment and to the service of food and beverage products that are free from harmful bacteria or other contaminants.
Follow daily, weekly and regular cleaning and sanitization standards of the kitchen.
Skills, Knowledge and Training:
Knowledgeable and experienced in all aspects of kitchen operations.
Understanding of the food industry and food service best practices.
Knowledge of food safety principles and procedures.
Over 5 years cooking in a restaurant or similar environment, and/or relevant schooling.
Familiarity with various cooking techniques and equipment.
Demonstrated ability to create a memorable food experience.
Customer service focused.
Extensive knowledge of food allergies an asset.
Knowledge of Indigenous foods is an asset with a passion for continued learning.
Proven experience in a team leadership role in the kitchen.
Strong communication and teamwork skills.
Hard working with the ability to take directions.
Effective planning and organizational skills for large scale functions.
Ability to work in a fast-paced environment while maintaining attention to detail.
Demonstrated organizational and time management skills with the ability to multi-task and set priorities.
Adaptable and flexible.
Proficient in English with an Indigenous language and/or French as an asset.
Demonstrated conflict resolution and problem-solving skills, demonstrates sound judgment with logical resolutions.
